How to Make Delicious Bundt Cakes Without Any Hassle?

Most of the people love Bundt cakes, not just because these cake recipes are moistest and delicious, but because they are easy to make and require little or no decoration. They can use any one of the fancy bundt pans available on the market and make impressive bundt cakes without putting any major efforts. Bundt pans are special cake pans meant to bake up traditional ridged round cakes. Due to their ridged or fluted designs, they can easily give an attractive shape to the finished cake. The bundt pans have a hole in the center which helps circulate the hot air around and across the cake and make it bake evenly. The pans now come in so many creative designs but with the more complex styles people face the problem of cake getting stuck in the pan. They need to use the right tools and some useful tips to remove the cake properly from the pan. The tips are as follows:

Use a non-stick cooking spray. Sprinkle some non-stick vegetable oil on the bundt pan. You can also use a non-stick cooking spray like Bakers Joy for good results. Then, brush the sprayed oil into the grooves of the pan with the help of a pastry brush and keep the pan facing downward on a paper towel so that the excess oil can drain away. After greasing the pan with small amount of vegetable shortening, you must dust it lightly with flour. Once you finish, turn the pan upside on your work surface to remove extra flour.Or dust your bundt cake pan with finer bread crumbs instead of flour. You can also dust the pan with finer bread crumbs. The dry bread crumbs will work better than flour.Bake the cake and let it cool for 10 minutes before taking out of the pan. Pour the batter slowly into the pan and put it in an oven. Bake it for the specified time and allow it to cool 10 minutes or more if required. Use hot pads to lift the pan and mildly shake it to loosen the cake from all sides. You can also run a plastic knife or rubber spatula around the edge of the cake to help it loosen from the sides of the pan.Invert the cake, continue cooling and drizzle or dust. Invert the baked cake onto a cooling rack or plate and continue with cooling. Dust the cake with finely powdered sugar or drizzle some chocolate or caramel sauce over the top.

Dragon Cupcakes Tutorial

My little boy had his 4th birthday earlier this month.  I usually let him pick what he wants his cake decorated as.  This year, the request was for dragons.  I don't know where he came up with that one.  He does watch Jane & The Dragon occasionally on qubo, but not that frequently.  (Sure little man, whatever you want!)  I opted for cupcakes since his sister's birthday is 3 days after his, I do both of their cakes at the same time & cupcakes seem easier.  So my next post is the tutorial for her cute cupcakes.  Stay tuned for that... in the meantime, see how easy it is to make these dragon cupcakes for your little one's birthday.


Dragon Cupcakes Tutorial
  • 24 cupcakes
  • 1 (3-cup) recipe buttercream icing (I usually just use Wilton's recipe)
    • Green, orange, red, white & black food coloring (for body, spikes, tongue, & eyes.)
    • Wilton #2 tip x 5 for spikes, eyes, & tongue
    • Wilton #10 or #12 for head, snout & body
    • Pastry bags & couplers



Bake cupcakes, cool & ice with a thin layer of prepared, white buttercream.  Save a little bit of white for the eyes.

Color other buttercream & fill pastry bags.  

Using the #10 (or #12 tip) pipe the head & snout.  Then pipe the body.

Use the #2 tip to pipe to legs & the tip of the dragons tail.
Smooth any rough parts with a light dab of water on your finger.


Using the opposite color, with the #2 tip, pipe spikes, & claws on the feet of the legs.  Squeeze & pull up quickly to get a pointed effect.


Pipe eyes, nostrils & tongue.


Done!  Easy right?

Sweet & Savory Saturdays #19


Happy weekend everyone!  I cannot believe how HOT it has been here in Utah & this weekend is just going to be even hotter.  Yesterday was at least 100˚F & it's supposed to go up to 103˚F at one point this weekend!  Holy hot!  We have lots of yard work to do too, so we are in trouble!  But I do have to keep reminding myself that we live in a desert.

Root Beer Freeze

I've got another treat to keep you cool this summer!  I love root beer and ice cream, but not really as a root beer float.  I just can't seem to get the proper proportion of root beer to ice cream in each bite.  Anyway, I like my root beer & ice cream best if they are combined into a root beer freeze.  You know, like the kind you get at A&W.  If you have ever been to A&W and had their root beer freezes, then you are going to love making them at home!  It's so easy!!!  I should have used A&W Root Beer for the sake of this post, but I bought what was on sale & it tasted just fine.  This Root Beer Freeze is two ingredients & takes no longer than 2 minutes to make!  My husband wants me to keep those two ingredients on hand at all times now b/c he could not get enough of this shake!  My little guy loved it as well!

Root Beer Freeze

  • 2 cups vanilla ice cream
  • 1/2 (12oz) can root beer
  1. Blend ingredients in a blender until smooth.  Serve immediately.
*Tip: Use just enough root beer to blend smooth & then stir in additional root beer for a fizzier & foamier shake.

Copycat KFC Cole Slaw


I love KFC Cole Slaw!  I hardly ever eat at KFC because we try not to eat out that often, but when I do, I always get the cole slaw & biscuit for the sides.  There is just something mouthwatering about that sweet, crunchy side dish that makes me scarf it down.  I love it!  This copycat version is fabulous!  The longer it sits, the better it gets, so make this ahead of time & give it time to marry in the fridge.  You are going to love it!

Recipe lightly altered from Mom on Timeout by: Amber (Dessert Now, Dinner Later!)
  • 1/2 cup light mayonnaise
  • 1/4 cup buttermilk (or milk plus 1/4 tsp lemon juice; let sit 5 min before using)
  • 1 1/2 Tbsp apple cider vinegar
  • 2 Tbsp lemon juice
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp celery seed or celery salt
  • 16oz shredded bagged cole slaw cabbage mix
  1. Whisk everything but the cole slaw mix in a medium to large bowl.  Taste the dressing & season with extra salt & pepper if desired.
  2. Add cole slaw cabbage mix & stir thoroughly.
  3. Let cole slaw chill & break down in the fridge for a minimum of 2-3 hours.  Stir again before serving.

Gluten-Free Baking - A Journey into New Territory

Gluten-Free foods are taking their place in the world these days. We are all becoming more aware of gluten, gluten intolerance, celiac (or coeliac) disease, and what this means for so many people. While I am not gluten intolerant, I often cook and bake for functions, locally. Last year I was asked to provide little treats for a Princess Party, put on by the Dacotah Prairie Museum. Accompanied by a "queen", little girls from tots to teens were invited, to learn about the lives of real princesses. They were taught how to wave properly, and curtsey.

Little girls hear the word "princess" and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the little princesses and her queen were gluten intolerant, and couldn't partake of many of the little treats. This was an intolerable state of affairs! I decided I needed to learn about this disease, be aware of what was involved, and provide alternatives that would be tasty and exciting.

Over the past year, I have been trying out different gluten-free flour mixtures, and making lots of goodies, mainly from my own normal recipes, converted by simply substituting gluten-free flour and adding xanthan gum. In the main, they have been a whopping success. In my honest opinion, as someone who has been baking for 42 years, some of the cakes, fruit or nut loaves turn out more moist and tender than when made with wheat flour; a very happy discovery, without a doubt. The "queen" mentioned above, works at the museum, so I took an afternoon to talk with this young woman and learn more about what was involved. I also had baked one of my favorite coffeecake recipes, gluten-free and took it for her and the museum staff to try. They all loved it; moist and tender and full of flavor. The young woman was happy with my experiment, as was I.

Another great help along the way was finding Shauna Ahern's "Gluten Free Girl" website. I have studied her site extensively and learned all sorts of things there. I mixed up her gluten-free flour mixture to experiment with, as well as trying out one of her bread recipes; another success. I took some of the bread for the woman at the museum to sample, as well as a slice I slathered with homemade pesto and cheese and broiled. She exclaimed, "This is the best bread I've tasted since going gluten free!"

This coffeecake recipe was given to me by my best friend of 54 years, and is a terrific recipe, no matter which flour you choose. This is the original recipe; for gluten-free, I substituted a gluten-free flour mixture made up of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. I used this mixture measure for measure in this recipe, and added 1 teaspoon of xanthan gum to the sifted dry ingredients. Be sure to check the labels of ingredients for hidden wheat when making this Gluten-Free!

Bundt Coffeecake

1 cup unsalted butter

1½ cups sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla

½ teaspoon baking soda

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup chopped nuts; walnuts or pecans are good

2 teaspoons sugar

½ teaspoon cinnamon

Preheat oven to 350 degrees. Cream the butter and sugar until light. Add the eggs, sour cream and vanilla and mix well. Sift together flour, soda, baking powder and salt. Add the dry ingredients to the wet and mix well. Grease a 10-inch tube or bundt pan.

Mix together the chopped nuts, the 2 teaspoons sugar and the cinnamon. Sprinkle ½ of this topping into the greased pan. Put in half the batter - this requires "plopping" small spoonfuls of the batter into the pan as the batter is very thick. Then carefully smooth it to fill in any gaps. Tapping the pan on the countertop helps. Pour on the rest of the "topping" and again plop spoonfuls into the pan till all batter is used.

Bake for 1 hour, or until a knife inserted in the center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Sprinkle powdered sugar over the cake if desired. Serves 12 to 16.

GLUTEN-FREE OPTION: Replace the flour with your preferred gluten-free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. (Sometimes baking is a little bit longer than normal, but since the texture and moistness is so wonderful, I can wait those few more minutes!)

Strawberry Dream Cake

Our family was recently invited to some friends' house for dinner.
It was the first time since we moved that someone other than my parents was brave enough to do so.
I mean, having a family of 7 over is no joke!
Not many people are willing to do it.
This particular family has 7 kids of their own, so I think they knew what they were doing. :)

I offered to bring something and was of course thrilled when our hostess said I could bring dessert.

Hurray!  Time to try out a new recipe!!
(Grant thinks I'm such an adrenaline junkie for doing that.....trying out new recipes on other people. But I know I'm not the only one.....y'all do it too, right????)
Well, I actually tried out two new recipes - the other one will be coming soon.  And it involves lots of chocolate.  So stay tuned!

If you like strawberries at ALL, this is a must-make before strawberry season ends.  Well, okay, strawberry season is over here in Arkansas, but we're still getting some beautiful berries from California, so they'll do just fine.

I really can't recommend this cake highly enough.

Perfectly strawberry without any food coloring or artificial colors or flavors. My kind of cake.

It's got frozen berries pressed of their juice, which is added to the cake, while the pulp is added to the frosting.  There are sliced fresh berries sandwiched in the middle and garnishing the top - and the delightfully from-scratch cake is covered with a cream cheese frosting reminiscent of strawberry ice cream.

Yeah, I know.

Who wouldn't want a piece of this?



Strawberry Dream Cake
adapted slightly from Galley Gourmet

*Note: If you don't have cake flour, you can use 2 cups of flour and 1/4 cup cornstarch.  Sift together several times.

Cake:
10 ounces (2 cups) frozen whole strawberries
3/4 cup whole milk
7 large egg whites, room temperature
2 tsp. vanilla extract
2 1/4 cups cake flour*
1 3/4 cups granulated sugar
4 tsp. baking powder
1/2 tsp. salt (if you use unsalted butter, increase salt to 1 tsp.)
12 Tbsp. (6 oz) salted butter, cut into 12 pieces and softened

Frosting:
10 Tbsp. (5 oz) salted butter, softened
2 1/4 cups powdered sugar
12 ounces cream cheese, cold and cut into pieces
2 tsp. vanilla extract
Pulp from frozen berries in cake
8 ounces fresh strawberries, hulled and sliced thin

For the cake:
Preheat the oven to 350°. Line the bottom of two 9-inch round cake pans with parchment paper and lightly spray with non-stick baking spray. (Or just butter and flour the pans really well).
Put frozen berries in a microwave-safe bowl and heat until the strawberries are soft and have released their juice, about 5 minutes.  Place the berries in a fine mesh strainer set over a small saucepan.  Firmly press fruit dry (juice should measure 3/4 cup); reserving strawberry solids.  Bring juice to a boil over medium-high heat; cook stirring occasionally until syrupy and reduced to 1/4 cup, 6-8 minutes.  Remove from the heat and stir in milk.

Whisk strawberry milk, egg whites, and vanilla in a bowl. Using a stand mixer with a paddle attachment, mix flour, sugar, baking powder, and salt on low speed until blended.  Add butter, one piece at a time and mix until only pea-size pieces remain.  Add half of the milk mixture, increase speed to medium-high, and beat until light and fluffy, about 1 minute.  Reduce speed to medium-low, add remaining milk mixture and beat just until incorporated, about 30 seconds.  Give the batter a final stir by hand.

Divide the batter evenly into the prepared pans and bake until the cakes are lightly golden, about 20-25 minutes. Cool cakes in the pan on a wire rack for 10 minutes.  Remove the cakes from the pans, discarding parchment, and cool completely, about 2 hours.  (Cooled cakes can be wrapped with plastic wrap and stored at room temperature for up to 2 days)

For the frosting:
Using a stand mixer fitted with the paddle attachment, mix butter and sugar on low speed until combined, about 30 seconds.  Increase speed to medium-high and beat until pale and fluffy, about 2 minutes.  Add cream cheese one piece at a time and beat until incorporated.  Add reserved strawberry solids, vanilla extract, and salt and mix until combined.  I had to remove a few stringy pieces of strawberry pulp.
Use immediately or refrigerate until ready to use for up to 2 days.

Pat the strawberry slices dry with a paper towel.
Place one cooled cake on a serving plate.  Spread 3/4 cup frosting over the top of the cake.  Press 1 cup of the strawberries in an even layer over the frosting and cover with another 3/4 cup frosting.  Place the second cake on top and spread remaining frosting over the top and sides of cake.  Garnish the cake with the remaining strawberry slices.  Cake can be refrigerated for up to 2 days.  Bring to room temperature before serving.

Our family was recently invited to some friends' house for dinner.
It was the first time since we moved that someone other than my parents was brave enough to do so.
I mean, having a family of 7 over is no joke!
Not many people are willing to do it.
This particular family has 7 kids of their own, so I think they knew what they were doing. :)

I offered to bring something and was of course thrilled when our hostess said I could bring dessert.

Hurray!  Time to try out a new recipe!!
(Grant thinks I'm such an adrenaline junkie for doing that.....trying out new recipes on other people. But I know I'm not the only one.....y'all do it too, right????)

If you like strawberries at ALL, this is a must-make before strawberry season ends.  Well, okay, strawberry season is over here in Arkansas, but we're still getting some beautiful berries from California, so they'll do just fine.

I really can't recommend this cake highly enough.

Perfectly strawberry without any food coloring or artificial colors or flavors. My kind of cake.

It's got frozen berries pressed of their juice, which is added to the cake, while the pulp is added to the frosting.  There are sliced fresh berries sandwiched in the middle and garnishing the top - and the delightfully from-scratch cake is covered with a cream cheese frosting reminiscent of strawberry ice cream.

Yeah, I know.

Who wouldn't want a piece of this?



Strawberry Dream Cake

*Note: If you don't have cake flour, you can use 2 cups of flour and 1/4 cup cornstarch.  Sift together several times.

Cake:
10 ounces (2 cups) frozen whole strawberries
3/4 cup whole milk
7 large egg whites, room temperature
2 tsp. vanilla extract
2 1/4 cups cake flour*
1 3/4 cups granulated sugar
4 tsp. baking powder
1/2 tsp. salt (if you use unsalted butter, increase salt to 1 tsp.)
12 Tbsp. (6 oz) salted butter, cut into 12 pieces and softened

Frosting:
10 Tbsp. (5 oz) salted butter, softened
2 1/4 cups powdered sugar
12 ounces cream cheese, cold and cut into pieces
2 tsp. vanilla extract
Pulp from frozen berries in cake
8 ounces fresh strawberries, hulled and sliced thin

For the cake:
Preheat the oven to 350°. Line the bottom of two 9-inch round cake pans with parchment paper and lightly spray with non-stick baking spray. (Or just butter and flour the pans really well).
Put frozen berries in a microwave-safe bowl and heat until the strawberries are soft and have released their juice, about 5 minutes.  Place the berries in a fine mesh strainer set over a small saucepan.  Firmly press fruit dry (juice should measure 3/4 cup); reserving strawberry solids.  Bring juice to a boil over medium-high heat; cook stirring occasionally until syrupy and reduced to 1/4 cup, 6-8 minutes.  Remove from the heat and stir in milk.

Whisk strawberry milk, egg whites, and vanilla in a bowl. Using a stand mixer with a paddle attachment, mix flour, sugar, baking powder, and salt on low speed until blended.  Add butter, one piece at a time and mix until only pea-size pieces remain.  Add half of the milk mixture, increase speed to medium-high, and beat until light and fluffy, about 1 minute.  Reduce speed to medium-low, add remaining milk mixture and beat just until incorporated, about 30 seconds.  Give the batter a final stir by hand.

Divide the batter evenly into the prepared pans and bake until the cakes are lightly golden, about 20-25 minutes.
