Cranberry Lime Spritzer {Guest Post}


Oh my gosh!  I am so excited to share today's recipe you guys!  It's one of those drinks that you just can't stop drinking!  Well, I guess if you like a tart & lightly sweet drink, that is.  It's only 3 ingredients to make!  And it's a show stopper drink since it's garnished with bright, fresh cranberries & sliced limes.  Impress your guests with this beautifully delicious drink this year!  This is a contributor post I wrote for Pretty Providence so hop on over & check out the recipe there!

Crimson Christmas Punch


For me, there is really only one time of year that I drink my calories.  I am just not a milk, soda, or juice drinker.  I like my zero calorie water, but when the holidays come around, I want a special drink, & I want it to be good!  This Crimson Christmas Punch is pretty darn good!  It's got a myriad of tropical, fruity flavors all packed into one punch.  The sherbet makes it all foamy & delicious too!  This punch is a beautiful shade of red, so it's perfect to serve for Christmas parties.  Plus, it's non-alcoholic, so the whole family can enjoy it!  Happy Holidays!




Crimson Christmas Punch
Recipe from Beverages Mix Recipes & lightly altered by: Amber (Dessert Now, Dinner Later!)
  • 5 cups Tropical Punch
  • 1 cup Cranberry Juice
  • 1 cup Pineapple Juice
  • 1/2 cup Lemon Juice
  • 4-5 cups Ginger Ale
  • 1 pint Raspberry Sherbet

  1. Make sure all ingredients are chilled.  Combine all juices into a large punch bowl.  Add ginger all slowly to keep as much fizz as possible.  Add scoops of raspberry sherbet & let sit for a few minutes.  Serve with a ladle.

*Makes about 1 gallon.

White Grape Sparkler


This drink brings back really fond memories for me.  I actually first tried it at my friend's wedding.  I did her wedding cake.  It was my first "real" wedding cake I had ever done.  I spent all day doing her cake & couldn't wait to see the final look after the florist had added the flowers.  I came back that night for the reception, & found a freaking fingerprint in one of the dot decorations of my precious wedding cake.  Stupid florist!  Haha.  Anyway, they served this drink at the reception & I thought it was so good, that I asked for the recipe.  It's two ingredients.  This drink is a no brainer.  Simple, delicious & family friendly.  Nothing is better than a fun fizzing drink for the kids, but this one is white too, so it's not going to stain any clothes!  Win-win!  I liked this drink so much that I served it at my own wedding reception.  :)  It's perfect for any special occasion & the simplicity of it just can't be beat!



White Grape Sparkler

  • 1 (2 QT) bottle of White Grape Juice
  • 1 (2 liter) bottle of Fresca (or citrus or grapefruit soda)

Watermelon Lemonade

 
Do you tap/knock on all the watermelons at the store to test it's ripeness?  If you don't, then I might look stupid to you if you saw me at the grocery store!  They say if it sounds hollow it's NOT good, but if it sounds solid it IS good.  Or is it the other way around?!  Picking out a watermelon can be tricky business.  I do know that your watermelon should be heavy for it's size & should have a nice yellow "ground spot" where it rested while it grew in the sunshine, but do you know what?  I still have a hard time picking the right one!

This recipe was the result of a bad watermelon turned delicious again!  I will never have to worry about picking out a not so good watermelon again thanks to this recipe!  It's easy to make, tastes better than those flavored lemonades at a restaurant, & uses a lot of watermelon.  You need to try this drink!  It's fabulous!  And you can totally use a good watermelon too, but if you happen to get a yucky one, don't throw it out, save it with this recipe. :)

Watermelon Lemonade
Recipe lightly altered from Cheerios & Lattes by: Amber (Dessert Now, Dinner Later!)
  • 5 cups cubed, seedless watermelon
  • 4 cups water
  • 1 cup Country Time Lemonade dry mix
  • Ice cubes
  1. In a tall blender, combine watermelon & water.  Blend until smooth.
  2. Strain watermelon/water mixture into a large pitcher. Discard the pulp.
  3. Add dry lemonade mix & stir until dissolved.  Serve with ice cubes. (You may also blend the watermelon lemonade with a few ice cubes if you like.)
*Makes approximately 2 quarts.
**Straining the watermelon liquid is optional, if you don't strain it, the lemonade is more foamy, but I like it smoother with less foam.

Caribbean Slush

Is this summer heat getting you all hot & sweaty?  This drink is the perfect way to cool down!  It's incredibly delicious with many bright summery flavors.  It's FRUITY (we're talking bananas & lemonade), TROPICAL (using pineapple juice & cream of coconut) & extremely COOL & REFRESHING (enter the ice cubes & sparkling soda.)  This fun non-alcoholic drink is perfect for adults & kids alike.  I hope you like it as much as we did!  (We have even made it twice already!) Enjoy!




Caribbean Slush
Recipe by: Amber (Dessert Now, Dinner Later!)
  • 2 cups cold pineapple juice
  • 1 cup cream of coconut OR lite cream of coconut (NOT coconut milk; I use the brand Coco Lopez which is found in the aisle with the alcoholic mixers.)
  • 6 Tbsp Country Time Lemonade dry drink mix 
  • 2 frozen bananas (freeze bananas ahead of time without the peel, whole or sliced)
  • 4-5 cups ice
  • 1 cup pineapple coconut sparkling water (I used the brand Clear American, but the Sparkling Ice brand might be more common; they are both zero calorie sodas & either is fine.)
*Unless your blender can hold approximately 11 cups of liquid, divide the ingredients & blend half at a time.  (I used the tall pitcher of my Ninja blender & it barely fits it all.)
  1. Blend half of the first 5 ingredients until all the ice is pureed.  Add half of the soda & blend again until just incorporated.
  2. Repeat with the remaining half of ingredients.  Pour into cups & serve immediately.  
Makes approximately 11 (1-cup) servings.

Frozen Coconut Limeade


Here I go with the citrus again!  You know me & my lime addiction!  And if you don't, just check out all my lime posts.  I am loving this hot summery weather that we are already having, but let's face it, you gotta stay cool right?  Hence, this post.  I think I found my new favorite drink: Frozen Coconut Limeade!  


Don't get me wrong, I love my Brazilian Lemonade (which is actually a limeade.)  This is practically the same as Brazilian Lemonade, except coconut-y & frozen!  It's like a little frozen mocktail ready to be enjoyed while basking in the sun!  Are you ready for summer?  With this drink you should be!


Frozen Coconut Limeade
Recipe altered from High Heels & Grills by: Amber (Dessert Now, Dinner Later!)
  • 5 cups ice
  • 3/4 cup Lite Coco Lopez Cream of Coconut (found in the alcoholic mixers aisle at the grocery store)
  • 4-6 Tbsp frozen Limeade concentrate (more or less depending on desired level of tartness)
  • 3 Tbsp water

  1. Place all ingredients into a blender & blend on high until smooth.

*Makes approximately 7 (1-cup) servings.

Horchata


Well, I am back from vacation & ready to get back to blogging.  Did you miss me?  It was a nice little break & I hope you all enjoyed the recipes that my friends made for you.  

Today's recipe is in preparation for Cinco De Mayo.  I know I already posted some Homemade Flour Tortillas & Crockpot Pork Carnitas, but I have a couple more recipes that I want to share.  So stay tuned for Thursday's post as well, because it is one of my families most favorite recipes!  

This Horchata is just lovely.  I don't know what it is about cinnamon flavored rice milk, but I guzzle it up every time!  When we go to Costa Vida, one of my favorite places to eat out, I ALWAYS get the Horchata even though it's not the real deal; probably just a powder mixed with water.  But, if I have the chance to go to a Taqueria or authentic place, I always share a large cup of Horchata with my husband.  It's so refreshing & fairly simple to make at home, but I would double this recipe because it makes about 1 quart & my kids love this drink too, so it did not last very long.  Enjoy!

Recipe lightly altered from A Sweet Pea Chef by: Amber (Dessert Now, Dinner Later!)
  • 1 cup long grain white rice, rinsed
  • 4 cups water
  • 2 cinnamon sticks
  • 1/2 tsp ground cinnamon, plus more for garnish
  • 1 cup skim milk
  • 1/3 cup brown sugar, plus 2-3 Tbsp to taste
  • 1 1/4 tsp pure vanilla extract
  • Ice

  1. Wash and drain rice. Combine rice with cinnamon sticks in water and soak overnight in the refrigerator.
  2. After the rice has soaked for at least 8-10 hours, preferably overnight, discard the cinnamon sticks and pour rice and water into a blender. Add 1/2 tsp cinnamon and blend on low for 2-3 minutes until well blended. Pour blended rice mixture through fine mesh sieve two times and then through cheesecloth one more time to remove all gritty bits of rice.
  3. Pour strained mixture into a pitcher, add skim milk, brown sugar and vanilla and stir well to combine. Add more sugar if needed, to taste.  Best served with ice & a dash of ground cinnamon.

Shamrock Slush



This is the last St. Patrick's Day recipe I have for you this year.  Surprise!  It has LIME in it just like the Key Lime Cupcakes & Tangy Lime Bars!  I love my lime!  This drink was so fun for my kids to drink.  They loved watching me put it all in the blender & mix it up.  They were so excited to have the "green drink."  It is tangy & sweet & smooth.  We loved it & your family will too!  If you don't make anything else for St. Patrick's Day, make this.  It's so fast & requires no preparation besides a quick trip to the store for 3 ingredients.


Shamrock Slush

  • 1/2 QT (2 cups) lime sherbet, softened
  • 1/4 cup frozen limeade concentrate
  • 1 Tbsp sugar (optional)
  • 1 (12oz) can OR 1 1/2 cups lemon lime soda, chilled
  • 1 cup crushed ice
  • Green Sugar Crystals (optional)

Holiday Punch


Welcome back!  Today is day 4 of the 12 days of Christmas Sweets series here at Dessert Now, Dinner Later!  What is a holiday party without punch?  This drink is one my family has EVERY YEAR at both Thanksgiving & Christmas.  It's a non-alcoholic drink that is great for the whole family.  With just a few ingredients it whips up so fast & will be gone just as fast as it is made!  You can also dip the rims of your glasses in green sugar crystals for a fun holiday look!  Also, you are getting a bonus recipe today!  I am sharing my lightened up version of the same drink, which my mom thinks tastes better than the original.  (I think I might have to agree with her, but they are both delicious.)  If you are counting calories, you will want the second recipe.  Enjoy!  See you back here tomorrow!


Holiday Punch
Recipe by: Amber (Dessert Now, Dinner Later!)
  • 1 packet Tropical Punch Kool-Aid
  • 1 cup sugar
  • 2 cups cold water, chilled
  • 2 cups pineapple juice, chilled
  • 1 liter club soda, chilled

  1. Mix kool-aid packet with sugar, water & juice.  Stir until sugar dissolves.  Chill in fridge.
  2. Just before serving add cold club soda & give it a light stir to keep the carbonation.  *Makes 2 quarts.  (We usually buy enough to make this twice.)

*For fun: Dip rims of glasses in water or pineapple juice & then on a plate with green sugar crystals for a fancy holiday look.


**BONUS- Here is a lighter version for those counting calories.

Holiday Punch LIGHT

  1. Mix Tropical Punch Crystal Light juice packets with chilled water.
  2. Add Sprite Zero just before serving.  *Makes 4 quarts.

  • 1 packet Tropical Punch Kool-Aid
  • 1 cup sugar
  • 2 cups cold water, chilled
  • 2 cups pineapple juice, chilled
  • 1 liter club soda, chilled

  1. Mix kool-aid packet with sugar, water & juice.  Stir until sugar dissolves.  Chill in fridge.
  2. Just before serving add cold club soda & give it a light stir to keep the carbonation.  *Makes 2 quarts.  (We usually buy enough to make this twice.)

*For fun: Dip rims of glasses in water or pineapple juice & then on a plate with green sugar crystals for a fancy holiday look.

Wassail


Wassail is one of my favorite warm drinks in the fall.  I love the sweetness of the apple with the tang of the citrus & the bold flavor of the spices all wrapped into a warm soothing drink.  This also really makes your house smell amazing!  I guess I like to make things that create a heavenly aroma in my home because a lot of my posts lately have done just that!  I love fall scents, flavors, & foods!  This is a great holiday drink to serve for Thanksgiving or Christmas.  Enjoy!

Recipe from: Amber (Dessert Now, Dinner Later!)
  • 1- 96 fl.oz. (3QT) bottle apple cider
  • 1- 46 fl.oz.(1QT 14fl.oz.) can pineapple juice
  • 1 orange sliced
  • juice of 1 lemon
  • 2 cinnamon sticks
  • 1/2 tsp nutmeg
  • 3/4 tsp cloves
  • 1/2 cup sugar
  1. Add all ingredients into a LARGE crockpot & give it a quick stir to dissolve the sugar.  Cover & heat on high for 2 hours or low for 4 hours.  Serve warm.
  2. *Stovetop method: Heat on medium high until it reaches a boil, then turn the temperature to low & simmer, covered, for 1-2 hours.  Serve warm.
