Baked Artichoke Dip with a Kick {& Green Giant Veggie Chips #GiantFlavor}


In our family we have a habit ... or tradition ... or whatever you want to call it ... of referring to dishes after the person who gave us the recipe. The dish becomes forever known to us as 'so-and-so's whatever.' Like my absolute favorite Jean's Pizza. And Kate's Chili. And Joe's Roasted Garlic Mashed Potatoes, even though no one in the family can even remember exactly who Joe is!

And so, in keeping with our family's 'tradition,' this Baked Artichoke Dip should be called Jessica's Artichoke Dip, since this fabulous recipe was given to me by my dear friend Jessica. But since none of you would know who Jessica is, I decided to call it Baked Artichoke Dip with a Kick instead.

A Trio of Dips with Strawberries {Easy Entertaining}


When I entertain I like to have really delicious and really pretty foods for my guests. And sometimes really delicious, really pretty foods take a lot of time and effort to prepare. Which I don't mind. For a few things. But not for everything I'm serving. That's just too much work!

So I balance out those few time-&-effort consuming items with a lot of easy make-ahead really delicious and really pretty foods. Like this trio of fruit dips, served with fresh strawberries.

Lemon-Poppy Seed Dip with Fresh Strawberries


It's almost strawberry season in my neck of the woods! And I. Can't. Wait. I absolutely love fresh-from-the-field strawberries, eating most of them 'straight-up.' Just a quick little rinse ... and then a big ol' bite into the sweet, juicy goodness. Yes, my favorite way to enjoy strawberries.

But sometimes I do want to jazz my strawberries up just a bit. Like, with a really simple, flavorful dip. Oh, like with, say ... Lemon-Poppy Seed Dip? Yeh, that sounds good!

7-Layer Greek Dip


 


Are you ready for some football?!?!!  Oh, yes, it's the first Sunday of football season!  I'm excited ... but my husband is not.

See, our household is ... well, ... a bit 'backward' when it comes to sports.  I'm the sports fan of the family.  My husband is decidedly not.  I've always thought it's kind of funny that a woman who loves sports (me, that is) married a man who couldn't care less about them.  Do you know how many men out there would be thrilled to have a sports-loving wife??  Oh well.

In honor of the first Sunday of football season, I'm sharing this absolutely delicious 7-Layer Greek Dip adapted from How Sweet It Is.  I love that it's a Greek-flavors twist on the usual Tex-Mex layered dip.  And - BONUS! - it's healthy!  Love it when delicious and healthy come together.

Now, hubby may not love football - but he sure loved this dip.  It's definitely earned the hubby seal of approval.



With layers of hummus, creamy feta, tzatziki, kalamata olives, artichokes, cucumber, and tomatoes ... all laced with fresh dill and lemon, ... it's definitely got my seal of approval too.

7-Layer Greek Dip
Source:  Adapted from How Sweet It Is
Ingredients
2 c. plain Greek yogurt, divided
4 tsp. extra virgin olive oil, divided
1/4 c. very finely chopped seeded cucumber
About 1 c. peeled & seeded coarsely chopped cucumber
3 T. chopped fresh dill
1 garlic clove, finely minced
1 1/2 c. (6.5 oz. jar) kalamata olives, coarsely chopped
1 1/2 c. (12 oz. container) hummus (or make your own if you have a favorite recipe)
1 (15 oz.) can artichoke hearts, well drained and coarsely chopped
5 oz. package feta cheese crumbles
Juice of 1/2 of a lemon
1 large tomato, coarsely chopped
Salt & pepper


Directions
1.  Grab a pretty good-sized glass bowl (this makes quite a bit of dip) ... and get started layering in the ingredients.  Layer #1 - Tzatziki:  Use paper towels to pat dry the 1/4 up very finely chopped cucumber*.  In a small mixing bowl, combine 1 1/2 cups plain Greek yogurt, 2 teaspoons olive oil, the 1/4 cup very finely chopped cucumber, chopped fresh dill, minced garlic, and a pinch of salt and pepper.  Spoon into the glass bowl, spreading evenly along the bottom of the bowl.

2.  Layer #2 - Kalamata Olives:  Sprinkle the chopped kalamata olives evenly over the tzatziki layer.

3.  Layer #3 - Hummus:  Spread hummus evenly over the olive layer.

4.  Layer #4 - Artichoke Hearts:  Use paper towels to pat dry the chopped artichokes.  Layer on top of the hummus.

5.  Layer #5 - Cucumbers:  Use paper towels to pat dry the coarsely chopped cucumber.  Sprinkle with a pinch of pepper and layer in evenly over the artichokes.

6.  Layer #6 - Creamy Feta:  In a small mixing bowl, combine feta crumbles, remaining 1/2 cup Greek yogurt, remaining 2 teaspoons olive oil, lemon juice, and a pinch of pepper.  Spread evenly over the cucumber layer.

7.  Layer #7 - Tomatoes:  While chopping tomatoes, remove some of the large 'clumps' of seeds.  Use paper towels to pat chopped tomatoes dry, and then place tomatoes on top of the creamy feta layer.  Sprinkle with a bit of salt and pepper.  Chill for about an hour to let the flavors meld.

8.  Garnish with a fresh dill sprig and a bit of lemon zest, if desired.  Serve with pita chips or crackers.


Notes:
- *Patting the ingredients dry is optional, but I recommend doing this.  As this dip sits, it will tend to get watery ... so I do all I can to get as much water out & away from the ingredients as I'm making this.  Don't worry - if/when it gets a bit watery, it's still absolutely delicious ... just a tad more messy to 'dip' out.
- Due to the possibility of 'wateriness,' I usual make this the day I'm serving it, not the day (or couple of days) before.
- This is a very 'flexible' dip - change up the ingredients to suit your taste!

Hot Corn Dip


I love corn.  I love warm-and-creamy comfort foods.  I love spicy.  I love dips.  And this dip deliciously combines all these wonderful loves of mine.  This recipe is from a friend of mine, who served it at her 40th birthday party.  Let me just say, it was the hit of the party! (Well, aside from the guest-of-honor herself, of course.)  And it's no wonder why.  This dip is so, so, so good.

What could be better than this being a hit-of-the-party kind of dip?  This being a hit-of-the-party kind of dip that is super easy to whip up!

You start with a Mexican blend canned corn.  I tried making it with two different varieties - 'standard' Mexicorn and Chipotle White Corn.  They were both good, but I liked the Mexicorn version better.  By just a little bit.

Mix the corn up with some cheese, mayonnaise ... ya know, the typical dip creaminess stuff ... and some chopped jalapeno, just to give it a little attitude.
Tasty creamy comfort is on it's way
Now resist the urge to eat it all up just like this.  Trust me ... getting it all hot and bubbly is worth the wait.

After it's all baked up, dig in.  I served it with pita chips, but it's also great with tortilla or corn chips.  And probably most plain-type crackers, too.  Whatever fits your fancy.

So good, you may want to consider making a double batch.  I'm just sayin' ...


Hot Corn Dip

Ingredients
1 (11 oz.) can Mexican corn, drained
1 c. shredded Monterrey Jack cheese
1/2 c. shredded Parmesan cheese
1 c. mayonnaise
Several slices jalapeno diced, to taste (fresh or pickled)


Directions
1.  Combine all ingredients.  Spoon into a lightly greased baking dish.  Bake at 350 degrees until bubbly and beginning to brown on top, approximately 30 minutes.  

2.  Serve with tortilla chips, corn chips, pita chips, or crackers.

Enjoy!

Easy Chocolate-&-Honey Fondue



Oh, fabulous fondue.  This is one of my absolute favorite meals to entertain with.  Why?  Because, truly, it's a really easy meal to prepare ... you gather together the stuff, and guests do their cooking themselves.  I mean, how easy is that??  And another thing? - It's just.  Plain.  Fun.

Fondue holds a very special place in my heart.  Growing up, fondue was my family's Christmas Eve tradition.  Mom would prepare three fondue courses - cheese fondue with bread for dipping, steak and shrimp fondue'd (I may have just made that word up) with peanut oil, and chocolate fondue for dessert.  Yum.  I am hard pressed to say which course was my favorite ... so hard to choose.  I can say for sure what my favorite dipper for the chocolate was - marshmallows!  I loved the marshmallows.

Back in those days, our fondue pots were the ones you had to keep a flame burning under as the heat source.  Anyone remember those little Sterno cup-like-things that burned blue flames?  I remember how hard it was for my mom to keep the pots at the right temperature for cooking with those little things.  We'd have to take breaks from the cooking during the steak & shrimp course to let the oil come back up to temperature!  Now, now we're spoiled.  With electric fondue pots.  If you're thinking of getting into fondue'ing, let me tell ya, electric pots are the way to go.  Easy sneezy (as we'd say in 1st grade). 

Recently, Mark and I had the pleasure of having friends over for an evening of fondue.  We had so much fun just chatting away, and cooking, and eating all evening long.  Way too much eating.  But hey, that's nothing loose-waisted pants can't accommodate, right?

So, just how easy is this easy chocolate-&-honey fondue?  Well, all you do is melt up some chocolate, honey, and evaporated milk in a fondue pot, and then dip away to your heart's content.  We usually make a big platter of dippers for people to choose from ... strawberries, bananas, and fresh pineapple are standard for us.  Other great choices ... pieces of pound cake, angel food cake, Rice Krispy treats, pears ...



... oh, and don't forget the marshmallows!  Happy fondue!

Easy Chocolate & Honey Fondue

Ingredients
  • 12 oz. semi-sweet chocolate chips
  • 3/4 c. honey
  • 1/4 to 1/3 c. evaporated milk
Directions
  1. Melt chocolate chips over medium heat in a fondue pot.
  2. Stir in honey. Add evaporated milk until mixture is desired consistency for dipping (I usually add only about 1/4 c. or so).
  3. Keep chocolate mixture warm in fondue pot.

Enjoy!

Oh, fabulous fondue.  This is one of my absolute favorite meals to entertain with.  Why?  Because, truly, it's a really easy meal to prepare ... you gather together the stuff, and guests do their cooking themselves.  I mean, how easy is that??  And another thing? - It's just.  Plain.  Fun.

Fondue holds a very special place in my heart.  Growing up, fondue was my family's Christmas Eve tradition.  Mom would prepare three fondue courses - cheese fondue with bread for dipping, steak and shrimp fondue'd (I may have just made that word up) with peanut oil, and chocolate fondue for dessert.  Yum.  I am hard pressed to say which course was my favorite ... so hard to choose.  I can say for sure what my favorite dipper for the chocolate was - marshmallows!  I loved the marshmallows.

Grand Marnier & Spiced Rum Fruit Dip {Party Series 2}

Grand Marnier & Spiced Rum Fruit Dip


This is one of my all-time absolute favorite recipes for entertaining.  No joke.

Try this.

And I'm not usually even a fruit dip fan.  But this is not your ordinary fruit dip.  It's light, fluffy, and oh-so-flavorful.

I've had this recipe for so long that, at this point, I have no idea where I got it.  I just know it's fabulous.  Mom decided to "borrow" it for her wine tasting party, and this was one of the menu items I was responsible for during our preparation.  On most of the dishes, I played the role of sous-chef - but on this one I got to take the lead!

This wonderfully flavorful fluffiness starts with sour cream (isn't that the base of almost all dips??), Cool Whip, and a pretty good helping of brown sugar.  Sounding good already, isn't it?  Ohhhh, trust me ... it gets much better.


Then we add the friends - Grand Marnier, dark spiced rum, and Triple Sec.  All I have to say is ... yum.


Mix that all together and then let it chill for a few hours.  The brown sugar will really soften up and kind of melt into the dip.  Give it a really good stir when you get it out of the refrig, and then serve it up with a selection of assorted fruits.  Divine!



Remember how I told you my Mom is really creative?  Well, here's another one of her amazing creations.  Check out these hors d' oeuvre picks my Mom made.  They're perfect for placing alongside a fruit platter.  A little fancier than toothpicks, don't ya think?  And she's so sweet she even made me a set.

Grand Marnier & Spiced Rum Fruit Dip

Ingredients
1/2 c. sour cream
1 c. Cool Whip
4 T. brown sugar
1 1/2 T. Grand Marnier
1 T. dark spiced rum
1 T. Triple Sec

Directions
1.  Combine sour cream, Cool Whip, and brown sugar.  Add liquors and whisk.

2.  Refrigerate for several hours.  Stir well before serving.  If the liquors "settle out," don't worry - just whisk or stir them back in.  Serve with an assortment of berries and fruit.

P.S. - Mark likes this with bananas the best!  Sometimes we spoon the leftovers over sliced bananas and eat it as a dessert.  Tasty.

Tapenade - and my winner of an olive oil tasting



If you love olives, then you'll love this tapenade.  When you make your own at home, it tastes soooo much better than those you buy in a jar at the grocery store.  And I never knew it was so super easy to make your own ... until a friend of mine and I took a one-day demonstration cooking class featuring olive oil.

I absolutely loved the class!!  The instructor made several different dishes using olive oil, and we got to sample each one - each paired with a different wine.  What's even better is we got to do an olive oil tasting!  Did you know that olive oils from different countries and regions taste distinctly different?  I sure didn't.  But, boy, do they ever.  It was really neat to get to taste the subtle, and sometimes not-so-subtle, differences in the oils.  So ... we got a cooking demonstration, meal, olive oil tasting, and wine tasting all rolled into one.  Sweet!  For a wine lover and olive lover like me, it was an absolutely wonderful day spent with an absolutely fabulous friend.

For each dish the instructor prepared, she'd begin by having us taste several olive oils from the region whose oil she was going to use in the dish.  We'd dip small pieces of bread in each of the oils and taste to our heart's content.  My favorites ended up being from Italy.  The Italian oils were very mild and smooth tasting, with a little bit of fruitiness to them.  My absolute favorite was Colavita Extra Virgin olive oil - yuuummmmmy!  Though I must say - I really didn't like the oils from Spain at all.  The Spanish ones had a bit of a bitter taste (sorry, Spain!).

We were treated to a salad with olive oil vinaigrette, tapenade and tapenade bruschetta, fish poached in olive oil, and ... for dessert ... olive oil gellato.  What???  Yes, olive oil gellato.  I was very skeptical of the gellato.  I mean, ice cream whose main ingredient and flavor is olive oil?  I was thinking this will not be good at all.  To my surprise, it was actually quite tasty.  Maybe because it was made with the Colavita oil I love so much!  It's not something I'll ever make at home, or would just jump for joy to see on a restaurant menu, but it was an experience I'm glad I had - mainly because it was a combination you don't expect to see.  I like to try combinations you don't expect to see.

My favorite dish of the day was the tapenade.  Naturally, then, I started making it myself at home.  The beauty of this recipe is you can adapt it to suit your tastes.  I start with a mix of several varieties of olives - a country mix that includes kalamata and Queen, regular ol' manzanilla stuffed with pimentos, and black.  Throw them all in your food processor, like this:

Don't like pimento-stuffed? - use something else.  Can't stand black?  Leave them out.  It's all up to you!  Next, toss in some capers.  The capers control the saltiness of the tapenade so, again, adjust to your taste.

 Grate in the zest of one lemon.  The original recipe called for the zest of two lemons, but I thought that was too much.  I like a little lemon zing with my olives, not a little olives with my lemon.

Add some parsley and give it all a good whirl in the food processor to chop and combine it, like this:


It tastes way better than it looks!
 Drizzle in olive oil, pulsing the food processor a couple of times, until the tapenade is moist.  There you have it - wonderful homemade tapenade in about 5 minutes flat.  Serve it up with some nice bread and enjoy!

Mixed Olive Tapenade
Adapted from Heidi Billotto

Ingredients
1 (6.25 oz) jar pitted country mix olives
1 (6 oz) can pitted black olives
A couple spoonfuls of pimento-stuffed manzanilla olives
1/2 of a 4 oz jar capers
Zest of 1 lemon
3 T. fresh or dried parsley
Olive oil


Directions
1.  Drain olives and capers; place in the bowl of a food processor.  Add lemon zest and parsley; process a few seconds to chop and blend ingredients together.

2.  Drizzle in olive oil, pulsing occasionally, until tapenade reaches your desired consistency.  It should be moist, but not runny.  Serve with bread or crackers.

NOTES:
- You can use any combination of olives you like ... all green, all black, 1/2 & 1/2, the mix I use - whatever you like!
- Capers control the saltiness, so adjust to taste.
- To make a tapenade bruschetta, spread tapenade on baguette slices, sprinkle on some mozzarella or goat cheese, and top with a piece of sundried tomato and chopped fresh basil; broil until the cheese is melty.
