Baked Acorn Squash with Maple Glaze

Tender baked acorn squash with a pure maple syrup glaze make for one of my all-time favorite fall side dishes. Its simple deliciousness will make you smile.

One of my all-time favorite flavors is maple. Since I grew up in Vermont, that probably comes as no surprise. I mean, Vermont is, like, practically the maple syrup capital of the world, after all. And one of my {many} favorite ways to enjoy maple is as a yummilicious glaze on acorn squash.

Okay, I know what many of you may be thinking already ... 'Brussels sprouts in a salad? Really, in a salad??'

Oh, yes ... in a salad. And this Brussels Sprouts Salad is sooooo good. It's one of our absolute favorites, and we have it at least once a week or so. Yes, it's that good.

Maple-Peanut Breakfast Cookies

Happy day after Easter and April Fool's Day and Spring Break day {at least for me}, all in the same day everyone! Mark and I just got back from spending Easter weekend 'home' with our families. We had a very nice and relaxing weekend ... Mark got to spend time doing two of the things he loves best - working with our bees and working with his tractor. I got to do two of the things I love best - be Mark's assistant beekeeper and hang out cooking with my Mom. Good times.

And one of the kitchen treats I was spoiled with this weekend by my Mom were these scrumptious Maple-Peanut Breakfast Cookies. Cookies for breakfast?? ...

Maple-Fried Apples & Maple-Mustard Pork Tenderloin

Since moving to The South, I've learned that we fry everything down here. The classic -- fried okra, fried green tomatoes, fried turkey. The new-to-me-but-I-love-it -- fried squash, fried pickles. And the okay-who-thought-of-that? -- fried Oreos. Yes, one of the little local cafes I frequent serves fried Oreos as a dessert. {Oh, and it's totally fabulous! ... in case you were wondering.}

And all these fried things are typically deep-fried. Ya know, in all kinds of smokin' hot oil that the food-of-choice is completely submerged in until it's a crunchy golden brown, oh-so-delicious-but-no-so-great-for-you bite.

So, when I encountered 'fried apples' on a menu one day, ...

Vermont Maple No-Bake Cookies {Thanks, Tonewood Maple!}

I am a huge fan of maple syrup! Pure Vermont maple syrup, to be exact. As many of you already know, I grew up in Vermont. Since moving to North Carolina (eighteen years ago after finishing college), I still have Vermont maple syrup shipped to me. For me, there's no substitute.

So when I had the opportunity to try Tonewood Maple's syrup, ...
