The Mood for Chocolate Mud Cupcakes

You can even make Christmas special with the chocolate mud cupcakes. These are even referred to as holiday cakes and to make them you require chopped butter and Lindt dark chocolate stuff. You should also arrange for instant coffee powder, coffee liquor, plain flour, cocoa powder, egg, brown sugar, hot water and chocolate curls for stupendous cake decoration. You would also necessitate preparing the chocolate ganache with Lindt dark chocolate accompanied by sour cream.

For the mud Christmas cupcakes you need to heat the oven at a temperature of 160°C. You can use one of those muffin pans with the paper cases placed in style. Take a medium sized saucepan to make a perfect amalgamation of butter, hot water, coffee liquor, coffee powder and chocolate, and stir the ingredients well over low heat. After the batter is completely smooth stop applying heat. Then it is time to add sugar after which you should leave the batter aside to cool for four to five minutes. Apply the blend over the already prepared pans and allow it to be baked for 15 to 20 minutes. The process is completed with the making of the chocolate ganache which should be spread well over the cupcakes.

For instance, when you sit to prepare the Santa hat cupcakes, you should make use of frosted red buttercream to give shape to the hats. Gingerbread Waffles

Oh, yes! ... It's almost Christmas! My baking is done. The presents are all wrapped (finally!). My last-minute grocery purchases are complete. And now ... it's time to simply enjoy the fun and festivities with friends and family. And in our family, nothing says Christmas day like these Christmas morning Gingerbread Pancakes.

Peppermint Crunch Chocolate Chip Cookies {for Sandy Hook}




This post is in honor and support of the victims of Sandy Hook. Bloggers unite on this day in support of the Newtown, Connecticut community after the tragic elementary school shooting one week ago, 12/14/12.


There's probably not a soul on the planet who hasn't heard of the horrific shooting at Sandy Hook Elementary School one week ago today. And, like many, I want to help. If even in just a tiny way. So I join forces with a group of bloggers who decided to unite on this day with 'Cookies & Crafts for Sandy Hook.'


While this post is but a small tribute to the victims and their families, it's big in heart.

When I first sat down to write this, I was at a total loss as to what to say. Quite honestly, most of what I would like to say are ugly words directed toward the perpetrator of this completely senseless act. But ... I guess that's not really productive.

Christmas White Chocolate-Peppermint Popcorn

Candy Cane Cookies {Our 'Black Friday' Project}

7 Layer Cookies


Merry Christmas in July!  My bloggy friend Yvonne at Stone Gable has a Christmas in July party going on right now, and today she posted the most beautiful white poinsettia stockings.  Impressive.  Truly impressive.

While I choose to live in denial that some local stores already have their Christmas decorations out ... I kid you not ... three weeks ago I saw one store putting them out! ... Yvonne's Christmas in July party inspired me to share one of our family's favorite Christmas-time cookies in honor of the occasion.

Now, I say Christmas-time cookies, not simply Christmas cookies, because the beauty of these sweet layer cookies is ... well ... they're not Christmas cookies!  Which means we can all enjoy their layered deliciousness any  time of the year!!
It just so happens that 7 Layer Cookies are a staple of my Mother-in-Law's Christmas day cookie tray.


I did not have the pleasure of meeting Mark's Dad.  But the story goes that these were one of his favorite cookies.  It's been told that, several years, Mark's Mom had to make more of these right before Christmas day because Mark's dad had eaten them all!  Ummm-hmmmm ... they're that good.

And they're only 7 ingredients.

Layered in a pan.

That's how they got the name 7 Layer Cookies.

You probably hadn't figured that out, had you??

Now, all snug in the baking pan, these cookies look all innocent, don't they?  But ...


... once you cut into them, their layered awesomeness is revealed!  And layered awesomeness it is.  Truly.  Mark's Dad wouldn't steer us wrong!

7 Layer Cookies

Ingredients
1/2 c. butter
1 1/2 c. graham cracker crumbs
1 c. flaked coconut
1 c. (6 oz.) chocolate chips
1 c. (6 oz.) butterscotch chips
1 (14 oz.) can sweetened condensed milk (fat free works just fine)
1 c. chopped pecans


Directions
1.  Lightly spray a 9x13" baking dish with non-stick cooking spray.  Melt butter in the bottom of the baking dish.  Add remaining ingredients in layers, in the order listed, sprinkling each ingredient evenly over the previous layer.

2.  Bake at 325 degrees for about 30 minutes.  Let cool completely in the baking dish.  Cut into small squares.

Enjoy!

Melting Snowman Cookies



Marissa and Annika were both the designated "snack bringers" for their Wednesday night church classes this week.
I had spotted these cookies recently and couldn't wait for a chance to make them.....they're just so CUTE!

The girls were very willing helpers in decorating these snow guys and gals - and their friends at church were super thrilled with them as well.
If we're not going to get real snow this year, we might as well eat some melting snowmen cookies, right?

Annika has been asking me if we can make these cookies every time they have to take snack, she loved them so much.  

Some of the snowmen weren't so happy with their fate - and some just took it all in stride with a big smile on their faces.  Some had bows - the one at the bottom right corner ended up with three of them, thanks to Marissa!  One had a headband that ended up looking like green hair.

This disgruntled snowman sported earmuffs with his nicely coordinated bow tie.  

Notes: 
  • You can make your cookie dough from scratch, or you can even use the sugar cookie mix or pre-made dough from the store if you so desire.  
  • The amount of Royal Icing was a bit much- I ended up with quite a bit leftover, but I'd rather have too much than too little.  We decorated 30 cookies. 


Recipe: (adapted from Truly Custom Cakery - she has a great tutorial on how to make these!)

Sugar Cookies (I used this recipe)
Large Marshmallows
*Royal Icing (recipe follows)
Icing Colors (Food Color or Wilton Gel Colors of your choice.)
Silver Dragees, Mini Chocolate Chips, or other little candy pieces to use for buttons and accessories (optional)
Wax Paper

*Wilton Royal Icing Recipe
3 T. meringue powder
1 lb. sifted powdered sugar ( about 4 cups)
6 T. water


Make your sugar cookies first.  Whatever recipe or mix you use, when the dough is chilled and ready to bake, shape into balls and press flat, about 1/4" thick.  They should not be identical or symmetrical - it's melted puddles of snow you're forming!


Bake and cool the cookies completely.  Then make the Royal Icing.

IF using a counter top mixer, beat all ingredients at low speed for 7 to 10 minutes until icing forms peaks. If you are using a hand held mixer, it will take more like 10-12 minutes.

AFTER you get stiff peaks, transfer a few Tablespoons of icing to a bowl and tint orange.  I used a tad of red and yellow. Scoop into a sandwich bag and seal it shut.  Snip off one tiny corner for piping. Because it was so thick, it stood out straight when I piped the noses and really looked like little carrots.  Fun!

Do the same procedure for any other colors you want to tint.

Thin the remaining white icing by adding water while stirring, a teaspoon at a time.

To test for the right consistency: Using a knife, scoop a little of your runny icing and hold above the bowl. As it drips, count to 10. By the count of 10, the icing that dripped down should meld into the icing in the bowl so there is no indication of where your drips landed.

Put your icing in a container covered with a wet paper towel and a lid when you're not using it. If you don't, the icing will dry out quickly. 


When frosting a cookie, don't be afraid to let it puddle around the base of the cookie a little.  Once it dries, it will stay there and look even more like melting snow!  Take a marshmallow and squish it a little.  Pipe on the facial features and place on the cookie.  Pipe on arms, buttons, and other additional details as desired.
 
We liked little bow ties....handsome fellow. 


Scarves were very nice too.  Note: all of my colored icing except the noses was sparkly decorating gels, not tinted royal icing.
