No-Bake Mint Chocolate Chip Pie

Fruit Salad Cheesecake




Holy cow!  Can you say B.U.S.Y.?????  I feel like I have been running ragged the past few weeks!  And, from what I hear 'around,' it seems to be a trend with lots of folks right now.  I haven't been in the kitchen at all for about the past two weeks ... we've eaten take out three times this week ... and I've resorted to my stash of  'emergency' frozen foods for the remaining nights.  I'm ready for life to settle down a bit.  How 'bout you?

Now, the crazy-busy'ness for me is coming mostly from work.  The start up of the schoolyear is kickin' my pa-tooty this year!  It's always busy for teachers at the start of the schoolyear, but this year is waaaayyyyyy extra busy.  We're implementing a 100% completely new curriculum, our staff of instructional assistants was cut in half due to budget constraints, and I have ... well, shall we say ... the most academically diverse class I've ever had.  But I'm persevering, will get things running smoothly without running myself ragged, and will be back in the kitchen soon.

[DISCLAIMER:  Contrary to my husband's opinion, the prior statements do not constitute 'complaining.'  They are simply statements of fact about the current situation, which absolutely is not complaining  He seems to confuse the two ... silly, silly man.]



So, for today's post I'm turning to a dish I've had in my queue for a while but just haven't shared yet.  I have quite a few of those.  I seem to be able to make stuff and photograph it much more quickly than I can edit all those photos and write posts.  That queue of stuff sure comes in handy for crazy-busy times like now!

I'm excited to finally share this Fruit Salad Cheesecake with you!

Mark is actually the one who found this recipe.  He was reading a magazine while we were visiting his mom one weekend, and it had a page of recipes in it.  Obviously knowing how much I love to cook and try out new recipes, he scanned for anything he thought would be of interest to me ... and landed on this Fruit Salad Cheesecake.  Isn't he sweet?

Well, he was certainly right ... this recipe was indeed of interest to me.  I mean, Fruit Salad Cheesecake??  I had never heard of such a thing!  And, of course, had to give it a try.

Think upscale fruit cocktail wrapped in a creamy, light-and-fluffy cream cheese-and-whipped-topping blanket.  And what a different way to present fruit salad!  I loved it.

I tried it out in two sizes ... full-size cheesecake made in a 9-inch springform pan, and these individual mini cheesecakes made in muffin tins.


Both worked, so size choice is just a matter of what presentation one wants to make.   

So, how do you make this unique fruit salad?  er, cheesecake?

Simply make a crushed pineapple, cream cheese, and gelatin mixture with a little simple simmering on the stovetop.  Then mix in some halved fresh grapes, mandarin orange slices, coarsely chopped maraschino cherries, and chopped pecans.



Fold in some whipped topping, and pour the mixture into a vanilla wafer crust.  Chill ... and you're done!  Pretty easy, huh?


For the individual mini fruit salad cheesecakes, I wasn't quite sure what would work best as a method for them ... so, I tried a few different ways:

1.  Pouring the fruit salad mixture into muffin cups first, topping with three vanilla wafer cookies as the crust, with the plan of then inverting them when I removed them from the pan.
RESULT: Not so great.  The vanilla wafers didn't 'fit' well, and they just looked kind of messy when inverted.

2.  Placing a single vanilla wafer in the bottom of foil cupcake liners, and pouring the fruit salad mixture on top.
RESULT:  Didn't like the look of the ridges from the foil liner, but it wasn't too bad a method.

3. Placing a single vanilla wafer directly in the bottom of muffin tin cups, without any type of cupcake liner, and pouring the fruit salad mixture on top.  My worry with this one was that I wouldn't be able to get the mini cheesecakes out of the pan.
RESULT:  This was my favorite method.  I liked the look of the smoother sides, and ...


... the 'remnants' left in the pan when removing the cheesecakes was minimal.  I simply sprayed the pan very lightly with nonstick cooking spray, and ran a knife around the edge of each mini cheesecake before lifting it out of the pan.


The vanilla wafer cookie doesn't completely fill the bottom of the muffin cup, so the bottom comes out looking like this:


... but I don't think it looks too bad! (Hey, how many people will turn their fruit salad over to check out the bottom anyway?)

I think they look pretty cute served up on a cake stand!

So, whether you make individual minis ... 


... or a full-sized cheesecake, this is one decidedly different way to serve fruit salad!  er, cheesecake.  er, fruit salad cheesecake.  er, whatever!

Fruit Salad Cheesecake
Source:  Adapted from Taste of Home, as published in Carolina Country magazine, May, 2012

Ingredients
Crust:
1 1/2 c. vanilla wafer crumbs (I give vanilla wafer cookies a quick whirl in the food processor)
2 T. butter, melted

Filling:
1 (20 oz.) can crushed pineapple, drained
3/4 c. sugar
1/2 c. cold water
2 envelopes unflavored gelatin
1 (8 oz.) package cream cheese, cubed
1 1/2 c. halved seedless grapes
1 (11 oz.) can mandarin oranges, drained and cut in half
1 (10 oz.) jar maraschino cherries, drained and roughly chopped
1/2 c. finely chopped pecans
2 c. whipped topping (such as Cool Whip)


Directions
For the Crust:  
1.  In a small bowl, combine vanilla wafer crumbs and melted butter.  Press into the bottom of a 9-inch springform pan coated with nonstick cooking spray; set aside.

For the Filling:  
2.  In a small saucepan, cook crushed pineapple and sugar over medium heat for 5 minutes or until heated through.  

3.  Place cold water in a small bowl and sprinkle with gelatin; let stand for 1 minute.  Stir gelatin mixture into the warm pineapple mixture.  

4.  Reduce heat to low and add cubed cream cheese.  Cook and stir until cream cheese is melted and the mixture is well blended.  Remove from heat and cool completely.

5.  Stir the grapes, mandarin oranges, cherries, and pecans into the cooled cream cheese mixture.  Fold in the whipped topping.  Pour into prepared pan.  Cover and refrigerate overnight.


For Minis:  Instead of making vanilla wafer crumbs and butter mixture, place a single vanilla wafer cookie in the bottom of muffin tin cups that have been very lightly sprayed with nonstick cooking spray.  Fill muffin tin cups full with fruit salad mixture.  Cover and refrigerate overnight.

Enjoy!

5.  Stir the grapes, mandarin oranges, cherries, and pecans into the cooled cream cheese mixture.  Fold in the whipped topping.  Pour into prepared pan.  Cover and refrigerate overnight.


For Minis:  Instead of making vanilla wafer crumbs and butter mixture, place a single vanilla wafer cookie in the bottom of muffin tin cups that have been very lightly sprayed with nonstick cooking spray.  Fill muffin tin cups full with fruit salad mixture.  Cover and refrigerate overnight.

Classic Oreo Icebox Dessert



I have been craaaaaaving  this Oreo icebox dessert for about a month now, ever since our end-of-school ice cream party when my 'room mom' brought in Oreos for the students to put on their ice cream.  (Yes, I'm highly suggestable ... advertising works very well on me ... especially when there's chocolate involved.) 

I went right out that afternoon and bought a package of Oreos so I could whip up this dessert.  But can you believe I didn't actually make it until this  weekend?  Let me tell you, my friends, that's showing some serious restraint for me!  It's sad to say, willpower is not one of my key strengths.

But alas, I succombed to the call of the Oreo.

I love Oreos.  Don't we all?  Well, as much as I love them, I think I love them even more when they're surrounded by layers of pudding and whipped cream. 

Like in this no-bake icebox dessert.

It looks innocent enough, right?  Just some whipped cream with a sprinkling of crushed Oreos?


Ah, but then you cut in and reveal the delicious and devilish layers lurking inside!  Creamy goodness.  I love creamy goodness.



Quick ... grab your fork!  Oh, and your glass of milk ... you'll still need it.

Oreo Icebox Dessert

Ingredients
1 (15 oz.) package Oreos, crushed
6 T. butter, melted
1 (8 oz.) package cream cheese, softened*
1 c. confectioners' sugar
1 large (5.1 oz.) box instant chocolate pudding* + milk to prepare, as specified on the pudding package
1 large (16 oz.) container Cool Whip whipped topping*


Directions
1.  Set aside about 1/4 cup crushed Oreos.  Mix remaining crushed Oreos with the melted butter.  Press into the bottom of a 9x13" pan.

2.  Combine cream cheese and confectioners' sugar; mix well.  Fold in 1/2 of the Cool Whip until well combined.  Spread the cream cheese mixture over the crushed Oreo layer.  Chill for 20 minutes.

3.  Prepare chocolate pudding according to package directions.  Spread over cream cheese layer.  Chill for 20 minutes.

4.  Spread remaining Cool Whip over the pudding layer.  Sprinkle reserved crushed Oreos on top.  Chill for 8 hours or overnight before serving.

*NOTE:  I use 1/3-less-fat Neufchatel cream cheese, sugar-free instant pudding (the ounces on the package will be less), and lite Cool Whip.  And it still tastes delicious!

Strawberries with Toffee Sauce


I am into seasonal strawberries right now!  They are so delicious when they're fresh out of the fields, brilliant red all the way through, and practically dripping with sweet juice when you bite into them.

But want to know what makes them even better?  This quick-to-whip-up toffee sauce!  Oh, yes indeed, it does. 

For a really easy, yet impressive and delicious dessert, just slice up some fresh strawberries and drizzle them with a little bit of this rich toffee sauce ... which just so happens to be chock full of tasty little toffee bits.  Top with a dollop of whipped cream or creme freche, and there you have it.  Isn't it pretty?

Don't feel like drizzling?  Oh, then go for the straight dunk!  Mmmm, hmmmm ... dunking whole strawberries was tasty, too.

Either way you dive on into this sauce, trust me ... your tummy will thank you.

Toffee Sauce
Source:  Adapted from my friend Beth


Ingredients
3/4 c. sugar
1/2 c. whipping cream
1/4 c. light Karo syrup
2 T. butter
1/2 c. crushed Heath Bars or Heath Milk Chocolate Toffee Bits*


Directions
1.  Combine sugar, whipping cream, Karo syrup, and butter in a small saucepan.  Bring to a boil, and immediately remove from the heat once it reaches a boil.  Let cool for about 10 minutes.  

2.  Stir in crushed Heath Bars or toffee bits.  

3.  Serve over sliced strawberries, and top with whipped cream or creme freche if desired.

*Note:  Heath Milk Chocolate Toffee Bits can be found in the baking aisle of the grocery store, in the same area as chocolate chips.  Be sure to get the Milk Chocolate Toffee Bits, not the plain toffee bits.  You need the milk chocolate on the bits to melt into the sauce.

No-Bake Strawberry Ice Box Cake


 It's strawberry season in my neck of the woods!  And I'm very excited about it.  I absolutely love fresh strawberries, straight from the field.  I'm so fortunate that my husband passes by a local farm stand every day on his way home from work.  So what did I do with my first delivery from my sweet hubby this past week?  Whipped up this delicious No-Bake Strawberry Ice Box Cake from 6 Sisters' Stuff.

As soon as I found this dessert on the Sisters' blog, I knew it was right up my alley.  Creamy.  Fresh strawberries.  A touch of chocolate.  Yes, please!

I'm happy to report it was a great choice for my first strawberries of the season.

The method to make this is very similar to the No-Bake Chocolate Eclair Dessert I posted a little bit back.  Except, this no-bake cake uses real whipped cream laced with a touch of almond extract (soooooo good!) instead of Cool Whip between the graham cracker layers.  I love Cool Whip, don't get me wrong ... but I really need to whip up the real stuff more often.  Real whipped cream is such a little bite of heaven!

So, whip up some whipped cream.  Then layer it with graham crackers and sliced fresh strawberries.




Make a really simple ganache with dark chocolate and a little bit of warmed whipping cream ...


... and drizzle it over the top.


Refrigerate over night, and then cut yourself a big piece.  No ... cut yourself a huge piece.  (You'll be glad you did.)

Now, a note to my blogging friends.  If you make this and want to photograph it, remember to save a couple of your most gorgeous strawberries to garnish your photo shoot plates. 

If, by chance, you happen to forget to save any strawberries and decide to stop at a vacant lot on your drive home from work to 'borrow' a few flowers ... you know, so you'll have something red for the side of your photo shoot plate .... make sure not to stand in a fire ant hill while picking said flowers.  Especially while wearing flip-flops.

If, by chance, you happen to accidentally stand in a fire ant hill while 'borrowing' flowers and wearing flip-flops, try to refrain from eating all three pieces of this you cut for the photo shoot to help drown out the fire ant 'fire' burning in your swollen toes.

Then, if by chance, you happen to decide to place a bag of frozen vegetables on your burning swollen toes as an ice bag to help soothe the fire ant 'fire,' make sure the bag doesn't have a hole in it.  Because if the bag does have a hole in it, as the vegetables inside thaw you'll end with green asparagus-water seeping out onto your carpet leaving a lovely pea-greenish stain.  Which you'll end up spending some time the next day steam-cleaning out.

You know, not that any of this happened or anything.

I'm just sayin' ... be sure to save out a couple of your most gorgeous strawberries for your plates.

No-Bake Strawberry Ice Box Cake
Source:  Adapted from 6 Sisters' Stuff

Ingredients
2 lbs. fresh strawberries, washed and sliced into thin slices
3 1/2 c. whipping cream, divided
1/3 c. confectioners' sugar
1 tsp. vanilla
1/2 tsp. almond extract
1 box graham crackers (about 24 to 28 whole graham crackers)
4 oz. dark chocolate, finely chopped


Directions
1.  With an electric mixer, whip 3 cups of the whipping cream until it just holds stiff peaks.  Add confectioners' sugar, vanilla, and almond extract and whip to combine.

2.  Spread a small spoonful of whipped cream in the bottom of a 9x13" dish.  Place down a layer of graham crackers. Spread on a thin layer of the whipped cream over the graham crackers, and then top with a single layer of sliced strawberries. Repeat with two more layers of graham crackers, whipped cream, and strawberries; then top with the last of the whipped cream.

3.  To make the ganache, heat the remaining 1/2 cup whipping cream until bubbles just begin to form around the edges in the pan.  Immediately pour over the chopped dark chocolate.  Let stand for a couple of minutes, and then whisk until combined and smooth.  Drizzle over the top of the layered cake.

4.  Refrigerate over night.


Notes:
- This recipe can easily be halved and prepared in an 8x8" pan, which is what I did.
- The almond extract is optional, but it makes the whipped cream so delicious!  I highly recommend including it.
- I used Dove dark chocolate.
- This is best eaten the day after it is made.  While it was still good on the second day, the strawberries do start to 'wilt' and lose some of their 'perkiness.' 
I can't really speak for the 3rd day.   :-)
