Apple Scones



The original recipe came from Allrecipes - this is my more flavorful and sweet version. Our family just adores these. I made them this morning and after we cleaned up the last crumb, Marissa was begging me to make more. Not today, sweetie. But soon. Very soon. These could almost be a dessert....and we eat them as is, no additional butter or jam needed.


Recipe:

1 cup all-purpose flour
1 cup whole wheat flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 t. cinnamon
1/8 t. nutmeg
1/4 cup butter, chilled
1 apple - peeled, cored and shredded (2 if they're small)
1/2 cup milk
2 tablespoons milk
2 tablespoons white sugar
1/2 teaspoon ground cinnamon

Glaze
1 cup Powdered sugar
Heavy dash of cinnamon
2-4 Tablespoons apple juice, or enough to achieve the consistency you desire.


Measure flours, sugar, baking powder, soda, salt, cinnamon, and nutmeg into a large bowl. Cut in butter or margarine until crumbly. Add shredded apple and milk. Stir to form a soft dough.
Turn dough out onto a lightly floured surface. Knead gently 8 to 10 times. Pat into two 6-inch circles. Place on greased baking sheet. Brush tops with milk, and sprinkle with sugar and cinnamon. Score each into 6 pie-shaped wedges.
Bake at 425 degrees F (220 degrees C) for 15 minutes, or until browned and risen.
While they're baking, mix together the powdered sugar, cinnamon, and apple juice to make a glaze. Drizzle on scones while still hot.
