Cilantro-Lime Vinaigrette


So I pretty much know any time I come across a recipe from Our Best Bites, that it is going to be a good one.  I have their first cookbook & can't wait for the second one to come out this month.  These gals are genius recipe developers & great food photographers.  You might want to use the link(s) to see their photos for the finished product because my little digital camera does not do their food (or any of my food for that matter) justice.  This particular recipe is part one of two.  I am still trying to sneak in a bit of summer before it becomes officially fall on September 22nd & what I make with this dressing is a perfect side dish to bring to your last BBQ this summer, but you have to wait until Thursday to see it!  This vinaigrette is nice and zippy & can be used for salads, tacos, or marinades.  Think of all the possibilities.  Like I said, Thursday's post will be using this dressing, & it's not your typical side dish, so you will want to stay tuned.  Delicious!


Cilantro-Lime Vinaigrette
Recipe tweaked from Our Best Bites by: Amber (Dessert Now, Dinner Later!)
  • 1/3 cup lime juice (2-3 juicy limes)
  • 1/4 cup rice vinegar
  • 4 cloves garlic
  • 1 tsp kosher salt
  • 2 tsp sugar
  • 1 cup canola oil
  • 1/2 cup roughly chopped cilantro, stems removed.
  1. Blend lime juice, rice vinegar, garlic, salt, & sugar in a food processor or blender.  Slowly add oil in a steady stream as blender is running.  Add cilantro until blended well.  Serve immediately or chilled, but keep refrigerated.
