Happy day after Easter and April Fool's Day and Spring Break day {at least for me}, all in the same day everyone! Mark and I just got back from spending Easter weekend 'home' with our families. We had a very nice and relaxing weekend ... Mark got to spend time doing two of the things he loves best - working with our bees and working with his tractor. I got to do two of the things I love best - be Mark's assistant beekeeper and hang out cooking with my Mom. Good times.

And one of the kitchen treats I was spoiled with this weekend by my Mom were these scrumptious Maple-Peanut Breakfast Cookies. Cookies for breakfast?? ...

Sour Cream Banana-Berry Bread


 
Sour cream makes everything better.  I really believe that!  It makes things moist & creamy, so I tend to add it to a lot of things.  Today's recipe is a super moist banana bread, with blueberries, because they pair well together.  If you are making banana bread & want more than just the typical banana bread or cake, then try this bread.  My son scarfed it down, & I may or may not have had more than my fair share.  Plus the flavors are so light & fruity that it's a great to lighten your mood for Spring.


Sour Cream Banana-Berry Bread
Recipe altered from Dinners, Dishes & Desserts by: Amber (Dessert Now, Dinner Later!)
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 ripe bananas
  • 2 eggs
  • 1/4 cup skim milk
  • 1/4 cup light sour cream
  • 1 tsp vanilla
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup frozen blueberries
  • 1/2 Tbsp all-purpose flour
  1. In a stand mixer, cream butter with sugar.  Add whole bananas.  Mix until mashed.  Add eggs, milk, sour cream & vanilla; blend well.  Scrape bowl.
  2. In a separate bowl combine flour, baking powder, baking soda, & salt.  Slowly add to wet mixture until just incorporated.  
  3. Thaw frozen blueberries in the microwave for about 45 seconds until just soft, not cooked.  Toss with 1/2 Tbsp of flour.  Fold into batter.
  4. Spray two medium loaf pans (7.5" x 3.5") or one large loaf pan (9" x 5") with cooking spray.  Divide batter evenly amongst pans.  
  5. Bake at 350*F for 45-50 minutes for medium loaves or about 60-70 minutes for a large loaf.  Allow to cool in the pan for 10 minutes before turning out onto a cooling rack.  Slice bread once it has cooled.

How to Make Delicious Bundt Cakes Without Any Hassle?

Most of the people love Bundt cakes, not just because these cake recipes are moistest and delicious, but because they are easy to make and require little or no decoration. They can use any one of the fancy bundt pans available on the market and make impressive bundt cakes without putting any major efforts. Bundt pans are special cake pans meant to bake up traditional ridged round cakes. Due to their ridged or fluted designs, they can easily give an attractive shape to the finished cake. The bundt pans have a hole in the center which helps circulate the hot air around and across the cake and make it bake evenly. The pans now come in so many creative designs but with the more complex styles people face the problem of cake getting stuck in the pan. They need to use the right tools and some useful tips to remove the cake properly from the pan. The tips are as follows:

Use a non-stick cooking spray. Sprinkle some non-stick vegetable oil on the bundt pan. You can also use a non-stick cooking spray like Bakers Joy for good results. Then, brush the sprayed oil into the grooves of the pan with the help of a pastry brush and keep the pan facing downward on a paper towel so that the excess oil can drain away. You need to avoid using a spray containing lecithin as it may build up on the baking pan over time.After greasing, dust or flour your cake pan and make it ready for baking. After greasing the pan with small amount of vegetable shortening, you must dust it lightly with flour. Just drop a tablespoon of flour into your greased pan, gently shake it and tap the pan multiple times with your palms, until the flour is distributed evenly over all surfaces. Once you finish, turn the pan upside on your work surface to remove extra flour.Or dust your bundt cake pan with finer bread crumbs instead of flour. You can also dust the pan with finer bread crumbs. The dry bread crumbs will work better than flour.Bake the cake and let it cool for 10 minutes before taking out of the pan. Pour the batter slowly into the pan and put it in an oven. Bake it for the specified time and allow it to cool 10 minutes or more if required. Use hot pads to lift the pan and mildly shake it to loosen the cake from all sides. You can also run a plastic knife or rubber spatula around the edge of the cake to help it loosen from the sides of the pan.Invert the cake, continue cooling and drizzle or dust. Invert the baked cake onto a cooling rack or plate and continue with cooling. Dust the cake with finely powdered sugar or drizzle some chocolate or caramel sauce over the top.

Sweet & Savory Saturdays #6


Thanks for linking up last week you guys!  I am loving these recipes & creative ideas you are sharing here at Sweet & Savory Saturdays!  

Quick little story: We bought a new over-the-range microwave because our last one was sparking & starting food on fire; it was at least 7 years old!  We had the new one sitting in our house for like a week without putting it up.  We read the instructions & were having issues completely understanding them.  I finally had my mom come look at the instructions with me & she gave me some pointers to help me feel confident to keep trying.  We ended up having to buy an $18 drill bit & a couple washers, but it was cheaper than paying the install guy $85.  We even had him scheduled to put it up for us on Tuesday because we were about to give up, but we got it up ourselves Monday night!  Phew!  That was a close one!  So we saved $67 by doing it ourselves!  I love those rewarding experiences.  We are so new to home ownership & fixing things, it's kind of embarrassing how un-handy we are, so it really feels amazing when we do stuff ourselves.  Don't you feel the same way?

Ice Cream Parlour For Your Special Ice Cream Memory

Its freshness keeps you asking for more from the very first bite to the last lick. Depending on the season, Natural offers an even bigger treat with its combination of mango or strawberry ice cream (only available in these two flavours), freshly cut pieces of the respective fruit, and a dollop of fresh cream. Cookie Making Made Easy My Busy-Mom-Method

In the early 1970s, when I was very young and with small children to care for, I had a few cookie recipes I would make very often, because they were simple recipes, with ingredients I usually had at hand. Cookies are a terrific snack, don't require utensils to pick up and eat and can be made ahead for a party. However, even with all that, they are just not my favorite things to make, because they need to be made either by dropping individually onto the baking sheet, rolling out and cutting (making a mess on the counter and more cleanup), or the often added step of having to chill the dough before working. I like immediacy. I want to mix up a recipe, bake it, clean up and be done.

One morning I made a batch of these cookies, finally popped the last pan in the oven, and set the timer. Itching to get outside for a bit and see what the children were doing, I went out . . . and got distracted. By the time I remembered the cookies in the oven, they had burnt and shrunken down to tiny little black hockey pucks - not even the dogs had any interest in them! It pays not to get distracted when baking. This was the last straw. I had to think of a better way.

I came up with a brilliant idea that I call my "Busy-Mom-Method"; one I use to this day. Rather than take the time to make all the individual cookies by batches, with separate baking times (and time to get distracted), I would roll the cookie dough directly onto a greased baking sheet, working it evenly to the edges and baking it as one large cookie. It is best to use a baking sheet that has three open sides, as it is simpler to maneuver the rolling pin and get the cookie rolled evenly. Keep in mind also, that a little more flour may be needed in the dough to allow for lifting it out and forming into a rough rectangle for rolling. Also, a little extra flour over the surface while rolling helps to keep the rolling pin from sticking. Try not to add any more flour than absolutely necessary, or the cookies will come out denser and harder.

It takes a few minutes more in the oven with one large cookie, but it comes out perfectly. Just watch for the edges to be golden, and the center to be set. With these cookies, I also make a simple icing that is just 1½ cups of confectioners' sugar, a pinch of salt, ½ teaspoon of vanilla and enough water or milk to make a relatively thick consistency (very slow to fall from the spoon). Spread this over the hot cookie straight from the oven. The hot cookie warms the icing, making it melt and spread easily, using the back of the same spoon I used to mix the icing. I am all for less cleanup! Once the cookie cools, the icing dries and hardens, and I just cut the large cookie into small bar or square shapes, and voila; cookies in half the time! Two of my favorite recipes for this method were Hermits and Simple Vanilla Cookies. If you are a busy mom, try this method with any simple cookie dough. The Hermit cookies had raisins in them, but the thickness of the dough was no less than the thickness of the raisins, so it still worked well.

Simple Vanilla Cookies

Makes about 7 dozen

1 cup unsalted butter

2/3 cup sugar

2 teaspoons vanilla extract

1 teaspoon salt

2 eggs

2¾ cups all-purpose flour

Cream butter, shortening and sugar. Add vanilla and salt. Add eggs, one at a time, beating well after each. Stir in flour, mixing well. Drop from a teaspoon 2 inches apart on a greased cookie sheet. Flatten with floured, flat-bottomed glass. Bake in a 375 degree oven for 8 to 10 minutes. Remove immediately from pan.

BBQ Chicken & Bacon Taquitos


Since it is warming up you are going to start seeing a lot of BBQ type foods from me.  Not that this recipe is made on the barbecue, well, it could partially be done on the barbecue, but that's not the point!  This meal makes me excited for summer & barbecuing.  But I am just glad it is warming up outside period.

So before it gets too hot to turn your oven on, make these scrumptious taquitos.  We had them for dinner with some salad & sweet potato fries, but you can make them & freeze them for snacks or a quick lunch as well.  Oh, & since we have breakfast for dinner frequently, I saved some of the bacon to use in these, making them that much easier to make.


BBQ Chicken & Bacon Taquitos
Recipe by: Amber (Dessert Now, Dinner Later!)
  • 1-2 chicken breasts (I used one large breast cut in half width wise to help cook evenly in the crockpot)
  • 1/2 (18-20oz) bottle favorite BBQ Sauce (more or less depending on preferences)
  • 5 slices of bacon, cooked & diced
  • shredded cheese (if desired)
  • 10 taco size flour tortillas (white or wheat)
  1. Place BBQ sauce & chicken in a small slow cooker.  Cook on low for 4 hours.  Remove chicken, shred with a fork & then add the BBQ sauce from the slow cooker. (*Optional: Brush chicken breasts with BBQ sauce & grill until no longer pink inside.  Cut chicken into small chunks & toss with additional sauce. [OR] Boil chicken breasts for 15 minutes until no longer pink, shred & sauce.)
  2. Add diced bacon & stir into the chicken mixture.
  3. Divide the mixture among 10 tortillas & add a sprinkle of your favorite cheese (we used colby jack, but mozzarella would be great.)  Tightly roll tortillas up.
  4. Spray a baking sheet with cooking spray & place finished taquitos on the baking sheet.  Lightly spray the tops of the taquitos.
  5. Bake at 400*F for 15 minutes, turning once halfway through.  Cook until crispy & heated in the centers.  Serve while hot.

Brownies with Browned Butter Frosting


We're on spring break this week.  It is so, so refreshing.
It's been wonderful to spend lots of time with my sister Sarah, whom I hadn't really seen in nearly two years and her girls, who are 9 and 6, just right there with my kiddos.
It's so nice to see that even with two years of not seeing each other, the cousins love each other so dearly and have the time of their lives. They've had a couple of sleepovers at my parents' house and one at ours, and they're not tired of each other yet.  That's good.

I volunteered to make dessert for a family dinner last Friday night and was excited to have the chance to make these brownies. I found them when I was assigned to The Tasty Cheapskate for the Secret Recipe Club last month and they were immediately on my list of "Make Soon" desserts.

I'm so glad I made them.  Grant's verdict: His favorite brownie ever.
And that's no joke coming from Mr. Chocoholic himself.

You take a dense, fudgy brownie and cover it with a luscious browned butter frosting and top that with a dark chocolate glaze - I mean, it is hard to beat that.

The browned butter flavor is so interesting.  Members of the family were trying to guess what it was, and I got answers like mocha, caramel, and coconut.  But nobody was convinced that their guess was correct, they just didn't know what else to call that remarkable flavor.  If you've never tried browned butter, you just have to try these brownies.  Seriously.  Just try them.

Brownies with Browned Butter Frosting

Brownie:
1/2 cup butter
6 ounces unsweetened chocolate (I used Bakers)
2 cups sugar
4 large eggs
1/2 tsp. salt
1 cup flour
1 tsp. vanilla

Frosting:
1/2 cup butter
2 cups powdered sugar
1/4 cup heavy cream
2 tsp. vanilla

Glaze:
4 ounces bittersweet chocolate (or 2 ounces unsweetened, 2 ounces semi-sweet)
3 Tbsp. butter

Heat oven to 300°F.  Butter a 13 x 9 " pan and set aside.

In a small saucepan, melt the butter and chocolate.  Remove from heat and cool.
In the bowl of an electric mixer, beat sugar, eggs, and salt on medium speed for 6-8 minutes, until fluffy and thick.  Fold in the chocolate, then flour and vanilla.

Pour into the pan and bake for 30-33 minutes, until a toothpick comes out nearly clean.
Cool completely.

To prepare frosting, melt the butter on low heat until it browns.  The butter will melt, reduce in volume, get foamy and slowly start to change color.  There will be some dark flecks in the bottom of the pan.  You want the butter to get to a nice caramel color and smell nutty.  Swirl the pan or stir it so it doesn't burn.  When it gets sufficiently browned, which may take 10-20 minutes, depending on how high your heat is (and I recommend medium heat at the most...you don't want to burn it!), give it a minute to cool then pour into a bowl.   Beat in the sugar, cream, and vanilla.

Frost the brownie layer.  Let cool for at least 15 minutes.

To prepare the glaze, melt the chocolate and butter in a small pan on very low heat.  Pour over the icing layer and gently spread it by tipping the pan back and forth.
Let it cool and set up for about an hour, then cut the brownies into squares.

We're on spring break this week.  It is so, so refreshing.
It's been wonderful to spend lots of time with my sister Sarah, whom I hadn't really seen in nearly two years and her girls, who are 9 and 6, just right there with my kiddos.
It's so nice to see that even with two years of not seeing each other, the cousins love each other so dearly and have the time of their lives. They've had a couple of sleepovers at my parents' house and one at ours, and they're not tired of each other yet.  That's good.

I volunteered to make dessert for a family dinner last Friday night and was excited to have the chance to make these brownies. I found them when I was assigned to The Tasty Cheapskate for the Secret Recipe Club last month and they were immediately on my list of "Make Soon" desserts.

I'm so glad I made them.  Grant's verdict: His favorite brownie ever.
And that's no joke coming from Mr. Chocoholic himself.

You take a dense, fudgy brownie and cover it with a luscious browned butter frosting and top that with a dark chocolate glaze - I mean, it is hard to beat that.

The browned butter flavor is so interesting.  Members of the family were trying to guess what it was, and I got answers like mocha, caramel, and coconut.  But nobody was convinced that their guess was correct, they just didn't know what else to call that remarkable flavor.  If you've never tried browned butter, you just have to try these brownies.  Seriously.  Just try them.

Brownies with Browned Butter Frosting

Brownie:
1/2 cup butter
6 ounces unsweetened chocolate (I used Bakers)
2 cups sugar
4 large eggs
1/2 tsp. salt
1 cup flour
1 tsp. vanilla

Frosting:
1/2 cup butter
2 cups powdered sugar
1/4 cup heavy cream
2 tsp. vanilla

Glaze:
4 ounces bittersweet chocolate (or 2 ounces unsweetened, 2 ounces semi-sweet)
3 Tbsp. butter

Heat oven to 300°F.  Butter a 13 x 9 " pan and set aside.

There are many ways to decorate your cupcake (we recommend the pumpkin) of your favorite kind of gives a creepy edge. You can go to the Orange icing and decorate each one such as a jack-o-Lantern. This would be a great activity for your kids and their friends. Is ready to go and let them go to town, drawing the face of black ice Orange iced coffee cupcakes! Or cool spider web effect, when ice cupcake desired color, draw 4 circles of contrasting color (like tree rings). Take a toothpick and start in the middle of the drag line on the outside of the inner tube of a bicycle spoke. The resulting effects on the web!

{Copycat} Chili's Salsa


Before I share my story, I am going to preface this post with some terms in case you are not familiar with Mormon lingo:
  • WARD: a ward consists of (Latter-Day Saint) Mormon members based on a geographical area in which these church members live.  For example: the Mormons within a few blocks surrounding my house belong to the 16th ward.
  • STAKE: not to be confused with steak (the meat) is a term used for a combination of wards belonging to one region. Another example: the Mormons who live in the next geographical area to my ward belong in the 8th ward, but we both are part of the same Stake.
I hope that makes enough sense that you will understand my story.  

So, this month we had a big party for church that they called a "Cruise."  It was held at our church building & there was: passports, pictures taken when you first "come aboard," entertainment, & food.  Each ward of our stake was in charge of a different country & had to have samples of food served there.  Our ward had the country: Mexico.  We signed up in church to help bring either chips, salsa, guacamole, or queso.  I signed up right away for salsa because I knew I wanted to make this recipe.  Plus, my husband has been bugging me to make salsa & I figured this would be a great time to make some for the party & let him try it.  

The party turned out to be such a great time.  They had activities for the children at each "port" in several of the classrooms & we had to get our passports stamped while we were there.  Our favorite was hula dancing in Hawaii, but we made some cool origami buildings in China as well.  Once the kids visited all 9 countries that were there, they got to go to the Captain's table & pick out a special prize (treat & toy.)  I thought it was a super clever party idea & there were LOTS of people there!


Anyway, back to the recipe!  This is a super easy salsa recipe.  I don't think you can get any easier than a couple cans of vegetables, part of an onion & a few seasonings.  The cool thing about this salsa, is the longer it rests, the more heat it gets!  It had a medium heat the day I made it, but the next day it was even hotter.  So if you like a hot salsa, this one is great if you let it sit in the fridge for a while.  Plus I like the pureed texture.  I like chunks sometimes, but I really love the smooth stuff.  As far as tasting like Chili's salsa...it has been a while since I have had Chili's salsa, but this recipe is all over the internet for Chili's copycat version & with the reviews I've read, I deem it credible.  Give it a go & tell me how it compares!



{Copycat} Chili's Salsa
Recipe lightly altered from Chef-In-Training & Six Sisters' Stuff by: Amber (Dessert Now, Dinner Later!)
  • 2 (14.5oz) cans whole tomatoes, drained
  • 1 (4oz) can diced jalapenos
  • 1/2 cup yellow or white onion, diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp sugar
  • 2 tsp lime juice
  1. Combine all ingredients in a blender or food processor & puree until smooth.  
  2. Taste with a tortilla chip & add more salt if needed; you don't want it overly salty, but tasting & adjusting the seasoning with a chip will help you know the right amount of salt since that is what you will be serving the salsa with.  Enjoy!

Classic Chocolate Layer Cake


It's my blogiversary!

Five years I've been at this blogging thing.....it's really hard to believe.

I know I don't have the most beautiful pictures, the most frequent postings, or the snazzy features of the popular food bloggers, but I enjoy my blog and the few minutes I carve out each week to post about one of the new recipes I made and actually got a chance to photograph.  And I appreciate each and every one of you who stop by and check things out, leave sweet comments, and maybe even give one of my recipes a try.  Truly I do.

So this cake wasn't really for my blogiversary.....it was actually a belated birthday cake for my sister Sarah, who lives in Tennessee and is visiting this week with her precious girls.  Her birthday was last week and so I thought it fitting to have a little family celebration, complete with a dark chocolate cake.
I was going to go all fancy and add a raspberry mousse filling.....but I just ran out of time for the extra shopping that would have required.

But Sarah didn't mind.  This cake is incredibly rich and decadent, with the frosting/filling reminding me of a truffle.  Creamy, intense, and so delicious.  Even the chocoholics among us had to stop with small pieces and savor each bite slowly.  Oh, except for Miranda (17 months), who couldn't shovel it down fast enough.  And then move on to mooch off someone else who still had some on their plate.  Girl after my own heart, that one.  

So here's to many more birthdays for my sister, and to many more years of blogging for me!

Classic Chocolate Layer Cake
adapted slightly from Annie's Eats

Cake:
1 cup unsweetened cocoa powder, plus more for dusting the pans
2 tsp. instant espresso or coffee powder
1 cup boiling water
1/2 cup sour cream
2 tsp. vanilla extract
1 cup (2 sticks) butter, room temperature (I used salted)
1-3/4 cups sugar
2 large eggs, room temperature
1-1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt

Frosting
10 oz. bittersweet or semi-sweet chocolate chips (I used a full package of Ghiradelli 60%)
1 (8 oz) package cream cheese, at room temperature
1/2 cup (1 stick) butter, room temperature
2-1/2 cups powdered sugar
4 Tbsp. cocoa powder, sifted
2/3 cup sour cream
2-3 Tbsp. heavy cream or milk (optional)

Preheat oven to 350°F.  Butter the edges of two 9" round cake pans and dust with cocoa powder, shaking out the excess.  Line the bottoms of the pans with parchment paper.  In a medium bowl, combine the cocoa powder, coffee powder, and boiling water.  Whisk until smooth; set aside to cool slightly.  When cooled down a bit, whisk in the sour cream and vanilla.  Set aside.  In the bowl of an electric mixer, beat the butter until smooth.  Gradually blend in the sugar and whip on medium-high speed until light and fluffy, about 2-3 minutes.  Blend in the eggs one at a time.  In a medium bowl, combine the flour, baking soda, and salt; whisk to blend.

With the mixer on low speed, add the dry ingredients in three additions alternating with the chocolate mixture, beating each addition just until incorporated.  Divide the batter evenly between the prepared pans.  Bake the cake layers for about 23- 27 minutes or until a toothpick inserted in the middle comes out clean.
Cool on a wire rack in the pans for at least 30 minutes before inverting onto the rack to cool completely.

To make the frosting, melt the chocolate in a heat proof bowl set over a pot of simmering water.  Set aside to cool until just barely warm.  In the bowl of  a stand mixer, beat the cream cheese and butter until pale and fluffy, about 3-4 minutes.  Gradually mix in the powdered sugar, cocoa powder, and salt.  Beat in the melted and cooled chocolate and then the sour cream.  Continue beating until the mixture is smooth and well blended.  If frosting is too thick, add cream or milk to get the proper spreading consistency.

To assemble the cake, place one of the cake layers on a cake board or serving platter.  Spread an even layer of the frosting over the top of the cake.  Top with the second cake layer.  Frost the top and sides.  You can do a crumb coat and then refrigerate for 30 minutes before doing the final coat if you want, but I didn't find it necessary.  The cake wasn't crumby at all.  Use an offset spatula or spoon to get a soft, billowy appearance if desired.

Note: I stored this cake at room temperature and it was fine.....but you might choose to refrigerate it.  I would recommend letting it come to room temperature before serving it, though.

Spicy Hawaiian Teriyaki Chicken Rice Bowl (Rumbi Copycat)


My kids & I like to get together with some other moms & kids in the neighborhood once a week.  We meet up for "play group," eat lunch, & chat.  It's typically held at our church (when it's bad weather) or the neighborhood park (when it's good weather.) It's a great time had by all; the moms get to chat with each other, & the kids get to run around like crazy & get all their energy out.  

I usually feed my kids before we go just because my kids are not good social eaters.  They can't have any distractions or they are slower than molasses!  My 3 year old son, in particular, has a really hard time eating on a time limit.  I try to give him plenty of time before we have to go anywhere, because as soon as he hears, "hurry" he panics.

Anyway, so back to the point of the story...one day at play group, another mom was eating her lunch & it looked really good.  She said she made this Rumbi copycat recipe & it was darn near the real deal.  I haven't had Rumbi in forever!  Not because we don't like it or anything, we actually quite enjoy it, but we usually only go there if we have a coupon.  Yes, I am a crazy coupon lady.  Or at least I used to be.  We don't get the newspaper anymore, & I am kind of relieved not having to clip mounds of coupons, but we do like to use coupons from the ads in the mail when we go out to eat.  Rumbi coupons aren't in abundance, so we rarely go.  We really don't eat out that much anyway, so when we do, we usually go somewhere we absolutely love, like Costa Vida (is my favorite) or a burger joint for the hubs.

It has been a while since I have had a Rumbi rice bowl, but it was a flavorful & delicious at-home dinner--period!  You will like this even if you have never tried Rumbi before.  One fair warning: this makes a TON of rice!  The proportion of rice to vegetables is almost 2:1 so you might want to double the vegetables, unless you absolutely love more starch than the healthy part.  I really liked everything this meal had to offer.  I loved the crisp vegetables, juicy chicken & bold teriyaki sauce.  The coconut red bean rice (aka Rumbi rice) was the perfect combination with the sauce & veggies.  It wasn't super flavorful on it's own, but the spicy teriyaki sauce helped bring out the coconut flavor in my opinion.  This is a great recipe!  I think it will be a summer favorite of ours.  We love to grill meat & eat fresh vegetables!


Spicy Hawaiian Teriyaki Chicken Rice Bowl (Rumbi Copycat)
Recipe slightly altered from Favorite Family Recipes & re-written by: Amber (Dessert Now, Dinner Later!)
Rumbi Rice:
  • 2 1/2 cups water
  • 1 (14oz) can coconut milk (about 1 1/2 cups; I used light coconut milk)
  • 1/2 Tbsp sugar
  • 2 cups long grain white rice
  • 1 (15oz) can red beans, drained and rinsed
Spicy Hawaiian Teriyaki Sauce:
  • 3/4 cups Mr. Yoshida’s teriyaki sauce (found in the grocery store by the BBQ sauces; I actually used Kikkoman Original Teriyaki Sauce.)
  • 1 tsp soy sauce
  • 2 tsp chili garlic sauce (in the Asian section of the grocery store; I used the one in the clear plastic jar with the green lid.)
  • 1 tsp fresh ginger
  • pinch of salt
  • 1 Tbsp of brown sugar
  • 1 Tbsp cornstarch (if needed)
  • 2 Tbsp COLD water (if needed)
Vegetables & Chicken:
  • 2 chicken breasts (about 2 cups, cubed)
  • Salt & Pepper
  • 1 Tbsp canola oil
  • 4 carrots, peeled and grated (approximately 1 1/2 cups)
  • 3 celery stalks, washed and sliced (approximately 1 1/2 cups)
  • 1 zucchini, chopped into small cubes (approximately 1 1/2 cups)
  • 1 1/2 cups chopped broccoli florets (approximately 1/2-3/4 large head of broccoli)
  1. FOR THE RICE: Combine all ingredients in a rice cooker. Gently stir it all together so the beans are all mixed. Place the lid on and start the rice cooker. Fluff rice with a fork before serving.  [If you don’t have a rice cooker: Combine water, coconut milk, and sugar in a saucepan. Stir in rice and beans. Bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender.]
  2. FOR THE TERIYAKI SAUCE:  Combine teriyaki sauce, soy sauce, chili garlic sauce, ginger, salt, and brown sugar in a small saucepan. Bring to a boil and then reduce to a simmer. If needed for thickening, combine cornstarch and water and SLOWLY add to sauce. You want it to be slightly thicker than the jarred teriyaki sauce. Allow to simmer for about a minute. Cool to room temperature and serve with your rice bowls. (If you find that the sauce is too thick when it cools, just add a little more teriyaki sauce to it.  I actually could have gone without thickening mine.  Just heating it up would have been perfect.)
  3. FOR THE VEGETABLES & CHICKEN: Season chicken with salt & pepper & grill for 4 minutes on each side, or until cooked through.  Allow chicken to rest before cutting into cubes; you can let the chicken rest while you cook the vegetables (it will help keep the juices inside.)  Heat canola oil in a large skillet over medium-high heat. Add carrots, celery, zucchini, and broccoli (about equal amounts.) Saute ONLY until vegetables are crisp tender. About 1-2 minutes tops.  Serve over Rumbi rice and top with chicken. Serve with Spicy Hawaiian Teriyaki Sauce on the side (about 3 Tbsp per bowl.)

If needed for thickening, combine cornstarch and water and SLOWLY add to sauce. You want it to be slightly thicker than the jarred teriyaki sauce. Allow to simmer for about a minute. Cool to room temperature and serve with your rice bowls. (If you find that the sauce is too thick when it cools, just add a little more teriyaki sauce to it.  I actually could have gone without thickening mine.  Just heating it up would have been perfect.)
  3. FOR THE VEGETABLES & CHICKEN: Season chicken with salt & pepper & grill for 4 minutes on each side, or until cooked through.  Allow chicken to rest before cutting into cubes; you can let the chicken rest while you cook the vegetables (it will help keep the juices inside.)  Heat canola oil in a large skillet over medium-high heat. Add carrots, celery, zucchini, and broccoli (about equal amounts.) Saute ONLY until vegetables are crisp tender. About 1-2 minutes tops.  Serve over Rumbi rice and top with chicken. Serve with Spicy Hawaiian Teriyaki Sauce on the side (about 3 Tbsp per bowl.)
