Cinnamon Chip Coffee Cake

I have had a bunch of cinnamon chips that I bought on clearance at the very beginning of this year, or maybe it was last Christmas I can't remember, but they were about to expire & I needed something to do with them.  My friend Jessica over at A Kitchen Addiction had this cake on her site & I knew I had to make it.  I altered it slightly, and my family gobbled up several slices in one sitting.  They were full on cake & totally ok with it.  I haven't used wheat flour in baking before, besides a Honey Whole Wheat Pizza Crust, so I could tell there was some in there, but it actually wasn't bad.  I am a fan of anything with streusel on top & I absolutely love cinnamon chips (check out my Cinnamon Chip Bread & Cinnamon Chip Pumpkin Muffins as well.)  So this recipe is a winner.  I do think I will bake it in a 13x9" dish next time.  The original recipe was for a 9x9 inch dish, I only had an 8x8" dish, so it came up pretty high & took a long time to bake.  Anyway, if you want a new coffee cake recipe to try, you will love this one!



Cinnamon Chip Coffee Cake

Cake:
  • 3 Tbsp butter
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 3/4 cup light sour cream
  • 1 1/4 cup skim milk
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 cup cinnamon chips
Streusel:
  • 1 Tbsp butter, melted
  • 2 Tbsp flour
  • 1/2 Tbsp cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup cinnamon chips
  1. Prepare streusel in a bowl by melting the butter; then add everything but the cinnamon chips.  Mix thoroughly with a fork.  Should be wet, but crumbly.  Set aside.
  2. In a stand mixer with the paddle attachment, make the cake by beating the butter with the sugars.  Add eggs & sour cream.  Mix until smooth & incorporated.  Add milk & mix together.
  3. In a separate bowl combine both flours, baking powder, baking soda, salt & cinnamon.  Gradually add to the wet mixture in the mixing bowl.  Fold in cinnamon chips.
  4. Pour batter into a greased baking dish.  Sprinkle the top with the prepared streusel & 1/4 cup cinnamon chips.  Bake at 350˚F for 45-50 minutes for an 8x8" square dish (which gets really full) or 30-35 minutes for a 9x13" dish.  Check doneness with a knife in the center of the cake.  Allow to cool for 10 minutes before cutting & consuming.
