Caramel Apple Cheesecake Bars

 
If I had to pick a new favorite dessert on my blog, this would be it, hands down!  Like, I am not even kidding!  The shortbread crust uses brown sugar, which I had never done before, & it just gives it a depth of flavor you don't get with a white sugar shortbread crust.  The cream cheese layer is perfectly creamy & just the right thickness.  The apples are lightly tart & the crunchy streusel just takes it over the top for me!  I am a streusel fan & this streusel was the perfect crunchy texture amongst all the other smooth & chunky elements of this dessert.  

You can eat this dessert as is, but the caramel drizzled over the top compliments everything so well.  Sometimes you worry with a dessert like this that it is going to be extremely sugary & hard to eat, but this is balanced incredibly well.  Just right in every bite! You HAVE to try this!  Like, yesterday!  Make this dessert for your neighbors, for the holidays, for an apple snack, who cares!  Just make it, & soon!


Caramel Apple Cheesecake Bars
Recipe lightly altered from Raining Hot Coupons by: Amber (Dessert Now, Dinner Later!)
Crust:
  • 2 cups all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 cup (2 sticks ) butter, softened
Cheesecake Filling:
  • 2 (8oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp pure vanilla
Apples:
  • 3 Granny Smith or Macintosh apples, peeled, cored, & cut into 1/2" or less cubes
  • 2 Tbsp sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 Tbsp lemon juice
Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1/2 tsp cinnamon
  • 1/2 cup (1 stick) butter, softened
Drizzle:
  • 1/2 cup caramel topping for drizzling after being baked
  1. Pre-heat oven to 350˚F.
  2. In a stand mixer, combine flour, brown sugar, & softened butter until it comes together (you will know when it's ready because it will be super dry & crumbly & then all of a sudden will pack together & look moist.)  Press evenly into a 13x9" baking pan lightly greased with cooking spray.  Bake 15-20 minutes or until lightly browned.
  3. In a large bowl, beat cream cheese with 1/2 cup sugar using an electric mixer at medium speed until smooth.  Then add eggs, one at a time, & then add vanilla.  Stir to combine.  Pour over warm crust.
  4. In a small bowl, stir together cubed apples, 2 Tbsp sugar, cinnamon, nutmeg & lemon juice.  Spoon apple mixture (juices & all) evenly over cream cheese mixture.
  5. For the streusel topping: Combine all ingredients in a small bowl with a fork until crumbly.  Sprinkle over the top of the apples.  Bake for 30-35 minutes, or until filling is set.  Drizzle with caramel topping & let cool.  Serve cold & enjoy!
*Makes 16 bars/squares.

Sweet & Savory Saturdays #35


Hey ladies!  Hooray for the weekend!  It's actually my husband's birthday on Sunday.  He is turning 29!  I still haven't bought him anything yet, but I am taking the kids shopping tonight after he leaves for a scout overnighter.  Sad for him that he has to do that for his birthday weekend.  Hopefully I can find something good to get him.  As for his birthday dessert, he asked for a Piña Colada.  Haha!  Since I have been baking a lot for the blog, he told me he is temporarily sick of sweets, but it's his treat, so he gets what he wants.

Skillet Baked Pasta - Vegetarian


Everywhere in the blog world, all I see is pumpkin and apple, pumpkin and apple, with a little more pumpkin added in for good measure.

Not trying to complain or anything - I adore pumpkin in so many things and appreciate new ideas in the fall.
It just kind of strikes me as funny, since most of these recipes use canned pumpkin, which is available year-round, so you really don't have to make pumpkin stuff only in the fall. Really. I like pumpkin in May.  Don't you?

That's why I either buy a few pumpkins when they're cheap and cook them, puree, and freeze in 2 cup portions or buy a bunch of cans on clearance after Thanksgiving.  I do the same with sweet potatoes.  I had such a great stash last year.....but ended up eating it in a huge rush and giving away quite a bit when we moved.  My freezer has been bare of sweet potatoes and pumpkin this entire year.  Gonna have to remedy that soon.

All that to say, I have YET to make anything with pumpkin or sweet potato this fall.
It's heresy for a food blogger, I know.  But it is what it is.
(I have made apple butter and apple sauce, for the record).

Maybe you'll enjoy seeing something else anyways. :)

How about a vegetarian pasta meal???

Most of the vegetarian meals I make revolve around beans or lentils. For the protein, ya know.

But when I saw this dish from the Girl Who Ate Everything, I couldn't resist giving it a try.
Now, I think it would be totally awesome with some crumbled cooked sausage, or sliced smoked sausage, or even diced, cooked chicken breast.  I may try one of those sometime.
But I have to say - it was totally awesome as is. 

The pasta cooks right in the tomato sauce and water, along with some spices and sauteed garlic - then you add some heavy cream  and Parmesan cheese - oh, and can't forget the basil!  I wish I had had some fresh on hand....but even the dried worked well.  Then you top the whole thing with dollops of ricotta cheese and sprinkle mozzarella over all that.  And into the oven it goes, to get all nice and golden and toasty.

Come on, now....tell me your mouth isn't watering.

A little indulgent?

Okay, maybe a little.

But completely worth it.

And I didn't miss the meat at all.

Skillet Baked Pasta 

6 garlic cloves, minced
4 tsp. olive oil, divided use
1/2 tsp. red pepper flakes
salt and pepper
1 (28 oz) can crushed tomatoes
3 cups water
12 oz. ziti pasta (3 3/4 cups)
4 oz (1/2 cup) whole-milk ricotta
1/2 cup heavy cream
1/2 cup Parmesan cheese, grated
1/4 cup chopped fresh basil (or 1 Tbsp. dried)
1 cup mozzarella cheese, shredded

Instructions:
  • Preheat oven to 475°.
  • Combine 1 Tbsp. oil, garlic, pepper flakes, and 1/2 tsp. salt in a 12 inch oven safe skillet and saute over medium-high heat until fragrant, about 1 minute.
  • Add crushed tomatoes, water, ziti, and 1/2 tsp. salt.
  • Cover and cook, stirring often and adjusting heat as needed to maintain a vigorous simmer, until ziti is almost tender, 15-18 minutes. Make sure you don't overcook - it will continue to cook in the oven.
  • Meanwhile, combine ricotta, remaining 1 tsp. oil, 1/8 tsp salt, and 1/8 tsp pepper in a bowl.  Set aside.
  • Stir cream, Parmesan, and basil into the skillet and season with salt and pepper to taste. 
  • At this point, if your skillet isn't oven safe, transfer pasta into a shallow 2 quart casserole dish before sprinkling with the ricotta and cheese and baking. 
  • Add dollops of the ricotta mixture with a spoon and sprinkle mozzarella evenly over ziti. 
  • Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Let cook slightly and sprinkle with additional basil. Serve.

Cheeseburger Casserole

I am in full casserole mode now that it's Fall & it's so cold outside that turning my oven on helps warm me up!  I will be honest, I was a little nervous about this casserole.  It sounded, well, interesting because it's meant to taste like an actual cheeseburger that you grill in the summertime.  I was shocked when I took my first bite, that it actually had all the flavor components of a cheeseburger there!  It has the seasoned beef, ketchup, mustard, tomatoes, onion, & cheese.  Um, WOW!  I really liked this casserole, like I went back for seconds because I liked it so much.  The original recipe had diced up pickles in it, which you can feel free to add to this one, but I am not a pickle girl, so I left those out.  Move over Hamburger Helper!  This one is simple & delicious!




Cheeseburger Casserole
Recipe lightly altered from Bakerette by: Amber (Dessert Now, Dinner Later!)
  • 2 cups (6 oz) uncooked rotini pasta (spiral pasta)
  • 2 tsp canola or vegetable oil
  • 1 1/2 cups onions, finely chopped (about 1 large onion)
  • 2 garlic cloves, minced (about 1 tsp)
  • 1 lb lean ground beef (I used 97/3)
  • 1 Tbsp peppercorn steak seasoning
  • 6 Tbsp ketchup
  • 3 Tbsp dijon mustard
  • 1 (14.5oz) can petite diced tomatoes
  • 2 cups cheddar cheese, shredded
  • 1/4 cup dill pickles, finely chopped (optional)

  1. Preheat oven to 350˚F.  Grease a 13x9" pan with cooking spray.  Set aside.
  2. Boil the pasta in a large pot according to the packaged directions until al dente.  Drain & set aside.
  3. Meanwhile, brown beef in a large skillet.  Drain fat & set meat aside.
  4. In the same skillet heat oil & saute onions 10 minutes or until translucent.  Add garlic & saute another minute or until fragrant.
  5. Return the beef to the pan & add the steak seasoning, ketchup, mustard, diced tomatoes, & cooked pasta.  Allow to simmer for 5 minutes.  Pour mixture into prepared pan & sprinkle with cheese.
  6. Bake for 15 minutes or until cheese is melted & everything is heated through well.  Serve hot topped with chopped dill pickle if desired.

Halloween No-Bake Chocolate Eclair Dessert

When it comes to Halloween, I have to admit I'm pretty low-key. Halloween is just one holiday that I don't get into all that much. I think it may have something to do with the fact that I broke my nose on Halloween when I was five years old falling down the stairs wearing my costume we'd made in Kindergarten class. Hmmm, haven't been much of a fan of the holiday ever since.

Pumpkin Swirl Brownies

So you know when you are baking pumpkin recipes & you end up having 1/2 cup of leftover pumpkin just sitting in your fridge & you don't know what to do with it?  Well, now you know that you can make these Pumpkin Swirl Brownies!  I don't think I really realized how well pumpkin & chocolate go together until I made these brownies!  They are phenomenal!  The chocolate is sweet & the pumpkin cream cheese swirl adds a smooth, moist, spiced flavor that compliments the fudgy brownies well.

Even if you have to crack open a can of pumpkin to make these bad boys, just do it!  You won't regret it!  





Pumpkin Swirl Brownies
Recipe altered from Betty Crocker by: Amber (Dessert Now, Dinner Later!)
  • 1 (18 to 19oz) box brownies (usually labeled as family size or for a 13x9" pan)
  • Ingredients for the brownies- Mine called for 1/4 cup water, 2/3 cup vegetable oil, & 2 eggs.
  • 4 oz cream cheese
  • 1/2 cup pumpkin
  • 4 Tbsp sugar
  • 1 egg
  • 1 1/2 tsp pumpkin pie spice (I use homemade)
  1. In a large bowl, add ingredients to the brownie mix according to the directions on the box.  Whisk & set aside.
  2. In a separate bowl, with a hand mixer, beat cream cheese with pumpkin, sugar, egg & pumpkin pie spice.
  3. In a greased square 8x8" or 9x9" baking dish, spread three-fourths of the brownie batter across the bottom.  Then drizzle & pour all of the pumpkin batter over the bottom layer of brownies.  Lastly, dollop the remaining brownie batter over the cream cheese mixture.  Using a butter knife, swirl the brownie & pumpkin batters together to create a marbled look.
  4. Bake at 350˚F for 50 minutes or until a toothpick comes out clean in the center.  Allow to cool before cutting & serving.  Store covered in the refrigerator.

  • Ingredients for the brownies- Mine called for 1/4 cup water, 2/3 cup vegetable oil, & 2 eggs.
  • 4 oz cream cheese
  • 1/2 cup pumpkin
  • 4 Tbsp sugar
  • 1 egg
  • 1 1/2 tsp pumpkin pie spice (I use homemade)
  1. In a large bowl, add ingredients to the brownie mix according to the directions on the box.  Whisk & set aside.
  2. In a separate bowl, with a hand mixer, beat cream cheese with pumpkin, sugar, egg & pumpkin pie spice.
  3. In a greased square 8x8" or 9x9" baking dish, spread three-fourths of the brownie batter across the bottom.  Then drizzle & pour all of the pumpkin batter over the bottom layer of brownies.  Lastly, dollop the remaining brownie batter over the cream cheese mixture.  Using a butter knife, swirl the brownie & pumpkin batters together to create a marbled look.
  4. Bake at 350˚F for 50 minutes or until a toothpick comes out clean in the center.  Allow to cool before cutting & serving.  Store covered in the refrigerator.
