Gingerbread Magic Cookies

Love magic cookies? Then you'll go crazy for this Christmas version of the classic! That's right, it's Gingerbread Magic Cookies, complete with a gingerbread crust, cinnamon chips, and white chocolate. It's just as good as the original ... hmmmm, perhaps even better!


It just so happens that classic 7-Layer {Magic} Cookies are a staple of my mother-in-law's Christmas day cookie tray. So when I decided to mess around with the original classic recipe to create a more 'Christmas-y' version, I braced myself to get in 'trouble' with my husband. Mint Truffle Muddy Buddies


I am a muddy buddy fan!  There is nothing quicker to whip up for a fun party snack than any version of these tasty treats!  Last year I made a Gingerbread Puppy Chow that was crazy good!  So, continuing with my Christmas tradition of muddy buddies, I have made the easiest Mint Truffle variation!  This one is probably the easiest flavors to make because it's only four ingredients.  I have also learned that these are a fabulous snack to have on hand for your children to munch on as you grocery shop.  Well, they get a little messy, but my daughter was so quiet & good in the cart the whole time as she snacked on these!  Haha.  Just sayin'....  Make these on Christmas eve & watch a good old Christmas classic movie & you've got yourself a fun night!





Mint Truffle Muddy Buddies
Recipe from Amber (Dessert Now, Dinner Later!)
  • 5 cups Rice Chex Cereal
  • 1 (10oz) bag Hershey's Mint Truffle Kisses
  • 1 Tbsp shortening
  • 1 1/2 cups powdered sugar
  • Optional: Mint & Semi-Sweet Chocolate Chips for garnish (love Guittard chips!)
  1. Unwrap the whole bag of Mint Truffle Kisses & place the chocolates into a large bowl with 1 Tablespoon of shortening (this makes it a smoother consistency once it's melted).  
  2. Microwave for 30 seconds.  Stir.  Microwave 15 seconds.  Stir.  Microwave 15 seconds. Stir.  Continue until chocolate is completely melted, but don't burn it.  Add cereal to bowl & GENTLY fold the chocolate over the Chex cereal until the it's fully coated.
  3. Place powdered sugar into a gallon-size zip-top baggie.  Add the coated cereal, zip the bag shut, & shake the bag until all the cereal is covered with powdered sugar & no longer sticking together.  Empty into a bowl & start snacking.  *Optional: Toss some mint & semi-sweet chocolate chips into the bowl with the muddy buddies for a pop of color & additional treats to eat.

Crimson Christmas Punch


For me, there is really only one time of year that I drink my calories.  I am just not a milk, soda, or juice drinker.  I like my zero calorie water, but when the holidays come around, I want a special drink, & I want it to be good!  This Crimson Christmas Punch is pretty darn good!  It's got a myriad of tropical, fruity flavors all packed into one punch.  The sherbet makes it all foamy & delicious too!  This punch is a beautiful shade of red, so it's perfect to serve for Christmas parties.  Plus, it's non-alcoholic, so the whole family can enjoy it!  Happy Holidays!




Crimson Christmas Punch
Recipe from Beverages Mix Recipes & lightly altered by: Amber (Dessert Now, Dinner Later!)
  • 5 cups Tropical Punch
  • 1 cup Cranberry Juice
  • 1 cup Pineapple Juice
  • 1/2 cup Lemon Juice
  • 4-5 cups Ginger Ale
  • 1 pint Raspberry Sherbet

  1. Make sure all ingredients are chilled.  Combine all juices into a large punch bowl.  Add ginger all slowly to keep as much fizz as possible.  Add scoops of raspberry sherbet & let sit for a few minutes.  Serve with a ladle.

*Makes about 1 gallon.

Buckeye Brownies


Last year around Christmastime I made some buckeyes, which to me, is traditional Christmas candy.  There is just something about chocolate & peanut butter that a lot of people love.  It's a perfect combination & goes great in desserts!  This year I wanted to keep with that buckeye tradition, but in a new form.  These Buckeye Brownies, taste just like buckeye truffles, but in a decadent brownie bar.  One square, & my satisfaction for sugar & chocolate is fulfilled for the rest of the day.  They are definitely rich & satisfying!  These Buckeye Brownies are an easy neighbor gift idea as well, because if you cheat & use a boxed brownie mix like I did, they are thrown together in a cinch!  Definitely make these when you have company to share them with, but make them soon!

Buckeye Brownies
Recipe lightly altered from The Blonde Buckeye by: Amber (Dessert Now, Dinner Later!)
Brownies:
  • 1 family size box brownie mix (makes a 13x9" pan)
  • Ingredients for brownie mix.  Mine called for:
    • 1/2 cup vegetable oil
    • 1/4 cup water
    • 2 eggs
Peanut Butter Buttercream:
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • pinch salt
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla
  • 1-2 Tbsp milk
Chocolate Glaze:
  • 1 cup semi-sweet chocolate chips (I love Guittard)
  • 1/4 cup creamy peanut butter
  1. Make brownies according to directions on the box for a 13x9" pan.  Grease the pan well before adding batter & baking.  Allow brownies to cool completely.
  2. Make the PB buttercream by creaming the butter, peanut butter, & pinch of salt in a stand mixer until all lumps of butter are smooth.  Add powdered sugar & vanilla.  Mix.  Add milk gradually until spreading consistency.  Spread PB buttercream over the top of the cooled brownies.
  3. Melt the semi-sweet chocolate chips & peanut butter in the microwave in short bursts, stirring frequently.  (I do 30 seconds, stir, 15 seconds, stir 15 seconds stir...until it's melted.)  Pour chocolate mixture over the PB buttercream.  Smooth with a spatula.  You can create a pretty design by zig-zagging the chocolate layer from one corner of the pan to the opposing corner.  Then dragging the tip of your spatula (or use the tip of a knife) to draw lines back & forth across the zig-zag pattern.
*Makes 24 brownies
